Function Description:

The YS640S is a versatile pellet grill that uses wood pellets as fuel to cook food. It can be set up for various cooking styles, including:

  • Smoking: Achieved with the diffuser plate installed, access door in place, and standard round bar cooking grates. Temperatures range from 175°F to 275°F, with the variable displacement damper generally pushed in five inches for even heat distribution.
  • Baking: Similar setup to smoking, with temperatures from 350°F to 400°F. The damper is also pushed in five inches for even heat.
  • Direct Grilling: For searing, this setup requires removing the heat diffuser plate, setting the variable displacement damper to the full-open position, and installing optional GrillGrate® cooking grates on the left side of the cooker. Temperatures range from 350°F to 600°F.
  • Indirect Grilling: For moderate temperature grilling (e.g., wings, chicken breasts), the heat diffuser plate remains in place, the access door is removed, the variable displacement damper is set to full-open, and optional GrillGrate® cooking grates are installed on the left side. Temperatures range from 275°F to 350°F.

Maintenance Features:

  • Stainless Steel Burn Grate: Regularly check and clean combustion air holes with a wire brush or flat-head screwdriver. Inspect for proper fitment and correct shape if warped by heat (diagram provided for correction).
  • Ceramic Igniter: Periodically inspect igniter assembly, tube, and rod for ash/debris and ensure the tube is tightly secured.
  • Cooking Chamber: Inspect and clean every 7-10 cooks, paying attention to grease channels. Degrease with citrus-based solution at the beginning of the season. Ensure silicone seals are intact and repair if necessary (Permatex 81160 or Sure Bond SB-188 recommended).
  • Grease Management Area: Visually inspect and scrape clean the grease drain and surrounding area.
  • Exterior Painted Surfaces: Wash with mild soap and water to remove grease/oils. Periodically inspect and touch up scuffs/bare spots. Season exterior every six months with mineral oil or ACF-50 and run the pit at 375°F until absorbed.
  • Pre-Grill Checklist: Includes removing and cleaning cooking grates, heat diffuser, burn grate, firebox (including igniter assembly), re-installing components, cleaning grease bucket, and inspecting hopper for foreign materials or damaged pellets.
  • Onboard Diagnostics: Built-in test diagnostics for igniter, fans, auger, and thermocouple temperature reading to verify functionality and diagnose component failure.
  • ACS Temperature Test: A 2-hour test to verify normal cooker function, requiring specific probe placement and full cleaning of the cooker.
  • Custom Temperature Offset: Allows users to input an offset into the ACS controller to provide a more accurate display temperature compared to the lower cooking grate level. This is done after performing the factory temp test.
