The DONPER D600 is a soft serve machine designed for commercial use, offering a blend of robust performance and user-friendly features. This manual provides comprehensive guidance for its operation, maintenance, and setup, ensuring optimal performance and longevity.

Function Description:

The primary function of the DONPER D600 is to produce soft serve ice cream or frozen yogurt. It operates by freezing a liquid mix within its cylinders while simultaneously agitating it to create a smooth, creamy texture. The machine features two hoppers, allowing for two different flavors of soft serve to be dispensed, or a twist of both. The dispensing mechanism consists of three handles, two for individual flavors and one for the twist option. The control panel provides intuitive access to various operational modes and settings, including auto, clean, and stop functions, as well as firmness adjustments.

Usage Features:

  • Setup and Placement: The D600 should be placed on a flat, dry, and clean surface, away from direct sunlight, with good ventilation. A minimum of 50cm (approximately 20 inches) of clear space on all sides is recommended to ensure proper airflow and effective operation. The machine should not be placed upside-down or on its sides, and its gradient should not exceed 30°. When lifting, users are advised to slide hands underneath the machine's base, avoiding lifting by the dispensing handle to prevent damage or injury.
  • Power Supply: Before installation, it is crucial to verify that the power supply meets the machine's operational requirements. After connecting the power wire, the main power switch, located below the control panel, should be flipped to the "on" position.
  • Mix Requirements: The raw material mix used in the D600 must have a sugar content of not less than 13% to prevent abnormal use and potential damage to the machine. The hoppers should not be overfilled past the maximum capacity line.
  • Operating Modes:
    • AUTO Mode: After pouring the mix into the hoppers, pressing the "AUTO" button activates the drive motor and compressor. The machine will cool the mix until the displayed hardness percentage reaches 99%. This number indicates the total hardness achieved. Once 99% hardness is reached, the drive motor and compressor will shut off for 5 minutes if not interrupted. Pulling a dispensing handle will immediately restart the motor and compressor until the handle is released and the hardness returns to 99%.
    • Ready Mode: This mode is active when the machine has reached 99% hardness and is ready for dispensing.
  • Adjusting Firmness: If the soft serve is not as firm or thick as desired at 99% hardness, the firmness setting can be adjusted. This adjustment can be made in "Ready Mode" or "Auto Mode." To adjust, press and hold the "UP" or "DOWN" button on the control panel until "SET" flashes on the display. The flashing number below "SET" represents the current firmness setting, ranging from 1 (least firm) to 10 (firmest). Users can press the up or down button again to change the setting. It is recommended to change the setting one step at a time. Once the desired setting is reached, press the "SET" button to save it.
  • Hopper Cooling: The "HOPPER COOLING" switch, located under the control panel next to the "MAIN POWER" switch, activates continuous cooling of the hoppers. This is not a controlled function; the compressor will constantly cool the hopper as long as the switch is in the "on" position and will not shut off automatically. Users must manually switch it to the "off" position. Leaving the hopper cooling on for an extended period can cause the contents in the hopper to freeze.
  • Stopping Operation: When finished using the machine, press the "STOP" button to shut off the compressor and drive motor.

Maintenance Features:

  • Daily Cleaning: Regular cleaning is essential for hygiene and to guarantee the health of consumers. After pressing the "STOP" button and with the machine in "Ready" mode, follow these steps:
    1. Press the "WASH" button to activate the drive motor and dispense any remaining soft serve until the hoppers and freezing cylinders are empty.
    2. Press "WASH" again to stop the drive motor.
    3. Fill each hopper with approximately 5-6 liters of water and press "WASH" to activate the drive motor.
    4. After about 5 minutes, discharge the water by pulling down on the handle until all water is dispensed.
    5. Repeat steps 3 and 4 two to three more times, or until the dispensed water runs nearly clear.
    6. Once the water is nearly clear, dispense the remaining water and press "WASH" to stop the drive motor.
    7. Before proceeding, switch the main power switch to the "off" position and unplug the machine from its power source.
    8. Remove the faceplate and auger from the machine and clean them thoroughly.
    9. Wipe down the inside of the hoppers and freezing cylinders with a soft cloth or sponge.
    10. After cleaning all parts, apply food-grade lubricant to all rubber gaskets and seals before reassembling the machine for future use.
  • Condenser Cleaning: Over time, dust can accumulate on the condenser, affecting its ability to radiate heat and causing refrigeration inefficiencies. To prevent this, it is recommended to clean the condenser periodically, typically every 4-6 months.
    1. Disconnect the machine from the main power supply.
    2. Remove the back and side panels.
    3. Use appropriate tools such as a vacuum cleaner or high-pressure air to remove dust.
    4. Exercise caution not to damage the fins on the condenser during cleaning.
