How speed bake works
Speed bake uses a convection fan to circulate the oven's
heat uniformly and continuouslyaround the oven (See
Fig. 1). This improved heat distribution allows for fast, even
cookingand browning results. It also gives better baking
results when using two racks at the same time. Heated air
flows around the food from all sides, sealing in juices and
flavors. Meats cookedwith speed bake are juicer. Poultry is
crispon the outside while staying tender and moist on the
inside. Breads and pastry brown more evenly. Most foods
baked in a standard oven will bake faster and more evenly
with the speed bake feature.
To set speed bake (on some models)"
1. Arrange oven racks and close oven door.
2. Press bake key pad. ------ .oappears in display.
3. Within 5 seconds, press A or V. The display will show
the default oven temperature of 350°F (177°C). By
pressing A or V, the oven temperature may be
adjusted in 5°F increments (1°C if the control is set to
display Celsius). When setting for speed bake, be sure
to set the oven temperature between 300°F (149°C) to
550°F (288°C).
4. As soon as the A or V key pad is released, the oven
will begin heating to the selected temperature.
5. Once the bake function isactive, press and release the
speed bake switch located on the backguard to start
speed bake. The speed bake indicator light will glow
when speed bake is active.
Tocancel speed bake, press the off key. The off key also
turns offthe oven. If more cooking time is required, pro-
gram a new bake cycle.
Baking:
Foroptimum cooking results it isrecommended to
preheat the oven when baking foods such as cookies,
biscuits and breads.
Reduce oven temperature 25°F from your recipe's
recommended oven temperature. Follow the remainder
of the recipe's instructions using the minimum
recommended cook time.
When using 2 oven racks at the same time, place in oven
rack positions 2 & 4 for best results (See Fig. 1). Please
note that layer cakes will have better results using the
Bakefunction.

Preheating is not necessary when roasting foods with the
speed bake feature.
Since speed bake cooks food faster, reduce the cook time
by 25% from the recommended cook time of your recipe.
Then if necessary, increase the time until the desired
doneness isobtained.
The speed bake fan will take 6 minutes to begin
rotating after the Speed Bake switch has been turned
ON. This is normal.

If the oven door is opened when speed bake isactive,
the fan will stop rotating until the oven door is closed.
Speed bake will not operate when clean is active.
When using speed bake cook time reductions may vary
depending on the amount and type of food being
cooked.
Dark or dull pans absorb more heat than shiny
bakeware resulting in dark or overbrowning of foods. It
may be necessary to reduce the oven temperature or
cook time to prevent overbrowning of some foods.
Dark pans are recommended for pies. Shiny pans are
recommended for cakes, cookies and muffins.
For speed bake be sure to set the oven temperature
between 300°F (149°C) to 550°F (288°C). If speed
bake isactive and the oven temperature lowers below
300°F (149°C), the convection fan and indicator light
will turn off but the oven will continue to bake at the
lower oven temperature.
