If you are not going to use the combi-steam oven after cleaning, we
recommend you leave the door open (overnight,…)
Dispose of the cleaning agent packaging in a usual way – take them
to places designed for the collection of plastic packaging.
Never leave used packaging lying around or freely accessible.
XI.Extras
The “Extras” section allows access to special functions of the
combi-steam ovens, e.g. it enables to preheat or cool the combi-oven
to a pre-set value. It is suitable to use these functions in case the
technological process we want to use does not allow the start from
actual temperatures in the cooking cabinet.
“Extras” section also allows access to the USB port on the combi-
steam oven to archive or record programs, it also enables to see the
HACCP data for the cooking processes to be checked.
Select the “Extras” section by pressing „Extras“ button.
The combi-steam oven offers the following functions:
1. “Low temperature cooking” option (LTC)
This function allows you to prepare food which needs longer
cooking time or slower cooking process (e.g. big pieces of meat).
There are two ways how to set LTC:
- Termination by Core probe
- Termination by Time
1.1 Termination by Core probe
Core probe is basic accessories in your combi oven. The core probe
measures the temperature inside the food. When the temperature
inside food reach preset temperature the cooking process is finished.
The setting is as follows:
