Pepper Pot Beef
Serves: 4 to 6
Ingredients:
1 teaspoon minced garlic 5 ml

1 tablespoon Worcestershire sauce 15 ml
1 tablespoon cracked pepper 15 ml
Method:
In a 3 litre dish mix garlic, capsicum, tomatoes, beef,
tomato paste, Worcestershire sauce and pepper.
Cook on Combination 1 for 40 to 45 minutes, stirring
halfway through cooking.
To Cook by Microwave:
Cook on MEDIUM-HIGH for 35 to 40 minutes or
until meat is tender. Stirring regularly. Serve with
steamed rice.
To Cook by Combination:
Prepare as above. Cover and cook on Combination
1 for 50 to 60 minutes or until beef is tender.
To Cook by One Touch Cooking:
Prepare as above and cover. Press ,

Casserole
Veal and Pineapple Casserole
Serves: 4 to 6
Ingredients:
125 g bacon, rind removed 125 g
750 g veal steak, diced 750 g
2 tablespoons seasoned flour 30 ml
2 onions, sliced 2
1 can (450 g) pineapple pieces, 1 can (450 g)
stained
2 tablespoons parsley, finely chopped 30 ml

1 cup tomato puree 250 ml
1 chicken stock cube, 1
crumbled
Method:
Cut bacon into 3 cm pieces. Combine veal, bacon
and remaining ingredients in a 3-litre casserole dish.
Mix well and cover.
To Cook by Microwave:
Cook on MEDIUM-HIGH for 30 to 35 minutes.
Stirring halfway through cooking.
To Cook by Combination:
Prepare as above, cook on Combination 1 for 40 to
45 minutes, stirring halfway through cooking.
To Cook by One Touch Cooking:

Herbed Beef and Mozzarella Roll-up
Serves: 4
Ingredients:
750 g topside mince 750 g
1 onion, finely chopped 1
1 clove garlic, crushed 1
black pepper
2 tablespoons chopped parsley 30 ml
1 tablespoons Italian herbs 15 ml
1 egg, lightly beaten 1
250 g Mozzarella cheese, 250 g
grated
Tomato Sauce:
1 can (425 g) tomato pieces 1 can (425 g)
1 tablespoons tomato paste 15 ml
1 teaspoons dried basil 5 ml
Method:
Preheat oven to 190-C. Mix all ingredients
(except cheese) until well combined. Lay a large
sheet of greaseproof paper onto a work surface.
Place meat on paper and press out firmly to
measure 35 x 25 cm. Sprinkle cheese over meat
mixture leaving a 2 cm border around all sides.
Tightly roll up meat mixture. Place in a 23 x 13cm
loaf tin. Cook on 190-C for 50 to 55 minutes. Drain
well after cooking. Stand for 5 minutes before
slicing.
To Cook by Combination:
Prepare as above. Cook on Combination 1 for 40 to
45 minutes. Drain well after cooking. Stand for
5 minutes before slicing.
Method for Sauce:
Combine all ingredients in a food processor and
process until smooth. Pour into 4-cup (1 litre) jug.
Cover with plastic wrap. Cook on HIGH for 5 to
7 minutes.
