You did not soak the

before cooking.
Soak the potato sticks in a bowl of
water for at least 30 minutes; take
them out and then dry them with
paper towels.
You did not use the right
potato type.
Use fresh potatoes and make sure
they stay firm during frying.
Fresh potato chips
are not crispy.
The crispiness of the
chips depends on the
amount of oil and water
in the potato sticks.
