Dehydrate Mode
Is a cooking mode that operates with the door open and requires special exceptions. •
Operates the convection fans with the door open.•
Operates the heating elements according to the algorithm in factory settings with the door open.•
Cooking Stages - Except Broil
The cooking stages in each mode control the element relays. A cycle last 60 seconds and then repeats until that
stage moves to another stage. The time listed for each element or fan lists the time that component operates in the
60 second cycle. Target temperature is the actual temperature that the lower band or high band is aiming for. For
example: a set point of 350° F, and Target Temperature of 20° F below the set point means the lower and/or high
band is opening the relay at 330° F. Call For Heat (CFH) Temperature is the number of degrees below target tem-
perature that cycles the element on. Target Temperature cycles the element off. For example: a Target Temperature
of 330° F, and a CFH temperature of 5° F, means the element relay will close at 325° F and open at 330° F. After
preheat is complete, logic shifts the cooking stage to lower band or high band. Recovery stage CFH is the temper-
ature determined by the equation (Set Point Temperature + Offset Set Temperature - CFH Temperature + Recovery
Offset Temperature) = Recovery CFH Temperature. Recovery shifts back to Lower or High band at Target tempera-
ture.
Example Roast Mode with a Set Point of 350° F. Target Temperature is 40° F above the set point (390° F). CFH
Temperature is 3°. Recovery CFH Temperature is 27° F above set point.
1. Pre-Heat 1 stage is room temperature to 80° F below set point:
Pre-Heat 1 will run from room temperature to 270° F.
2. Pre-Heat 2 stage is from 80° F below set point to set point:
Pre-Heat 2 will run from 270° F to 350° F.
3. Lower Band stage has an offset of 40° F above set point and CFH temperature of 3° F:
Target temperature is 390° F. Element on at 387° F and off at 390° F.
4. Recover stage CFH temperature is 27° F above set point: 350° + 40° - 3° + (-10) = 377°
Element on at 377° F and off at 390° F.
Each cooking mode (except Broil) shall contain one or more of the following cooking stages:
Preheat One
Is only active before the cavity reaches the set temperature.•
Is active when the cavity temperature is below the temperature range specified for Preheat Two stage. •
Preheat Two
Is active before the cavity reaches the target temperature.•
Is active when the cavity temperature is within a specified temperature range below the set point. •
The temperature range is set in the factory settings•
Lower Band
Is active after the cavity reaches the set point.•
Is active below a specified temperature. •
The Lower Band – High Band boundary temperature is set in the factory settings•
High Band
Is active after the cavity reaches the set point.•
Is active above a specified temperature. •
The Lower Band – High Band boundary temperature is set in the factory settings•
