Overview

This document outlines the setup, operation, and maintenance of Avantco commercial refrigerators and freezers, including pizza prep units, sandwich prep units, undercounter models, and worktop units with backsplashes. It serves as a comprehensive guide for users to ensure proper functioning and longevity of their equipment.

Function Description

Avantco commercial refrigerators and freezers are designed to maintain specific temperature ranges for food storage. Refrigerators are programmed to operate between 33 and 40 degrees Fahrenheit, while freezers maintain temperatures between -10 and +10 degrees Fahrenheit. These units are equipped with temperature controls that allow users to adjust the desired temperature setting. The system includes a refrigerant LED to indicate compressor operation, a fan LED for fan activity, and a defrost LED to signal when a defrost cycle is running. The units are pre-programmed to run automatic defrost cycles at preset intervals, but manual defrost cycles can also be initiated by the user. Pizza prep units and sandwich prep units are specifically designed to function with all food pans in place, ensuring optimal food freshness.

Usage Features

Installation Guidelines: Before initial use, it is crucial to allow the unit to stand still for a minimum of 24 hours if it has been transported on its side. This allows the refrigerant to settle. Users should ensure the unit reaches the desired temperature before loading it with product. Proper ventilation around the unit is essential for efficient operation, with a recommended clearance of 4 inches on the back of the unit. All accessories, such as shelves, shelf clips, and casters, must be installed prior to plugging in the unit. The unit should be installed on strong and leveled surfaces in an indoor, well-ventilated area to prevent noise and malfunction. Installation in high humidity or dusty areas should be avoided, as humidity can cause rust and decrease efficiency, and dust on the condenser coil can lead to malfunction. The unit should also be located away from heat and moisture-generating equipment to prevent the compressor from overworking, which can lead to higher energy bills and gradual breakdown. Operating the unit in areas over 80 degrees Fahrenheit, or over 90 degrees Fahrenheit with the lid open, is not recommended and can void the warranty.

Electrical Requirements: Users must ensure that the required voltage is consistently supplied to the compressor, as low or high voltage can negatively impact the refrigeration unit. All units must be plugged into a grounded and properly-sized electrical outlet with appropriate overcurrent protection, as specified on the nameplate. Each unit should have its own dedicated outlet, and extension cords must not be used.

Adjusting Temperature: To adjust the temperature, users should hold the “SET” button for 1 second; the display will flash the current temperature setting. The arrow buttons can then be used to adjust the temperature to the desired setting. Pressing “SET” again saves the new settings. If the unit consistently runs 5 or more degrees higher than the set temperature, service may be required. Temperature controls for pizza prep refrigerators are located on the front of the units, while controls for sandwich prep tables and undercounter refrigerators and freezers are located on the back. Setting the temperature control to the coldest setting may cause the evaporator coil to freeze and ice up, leading to warmer cabinet temperatures.

Loading Product: Before loading shelves, ensure all shelf clips are securely fastened and shelves are level. To maintain proper airflow, leave two to four inches of space between the back wall and stored product. Blocking evaporator fans can result in warmer cabinet temperatures and potential compressor failure.

Running a Manual Defrost Cycle: For freezers, press the defrost button (“def” and down arrow) for approximately 5 seconds to initiate a manual defrost cycle. Repeat the process to stop the cycle. For refrigerators, press the defrost button (snowflake symbol and down arrow) for approximately 3 seconds to start or stop the defrost cycle.

Loading Food Pans: Pizza prep and sandwich prep units are designed to operate with all pans in place, even if some are empty. For maximum food freshness, fill pans only with an amount that can be used within a specific usage period. During non-use, the insulated lid cover should be closed.

Maintenance Features

Regular Maintenance: Before performing any maintenance, always disconnect the power cord.

Cleaning the Condenser Coil: For efficient operation, the condenser surface must be kept free of dust, dirt, and lint. It is recommended to clean the condenser coil and fins at least once per month using a commercial condenser coil cleaner. Brush the condenser fins from top to bottom, not side to side. After cleaning, straighten any bent condenser fins with a fin comb.

Cleaning the Fan Blades and Motor: If necessary, clean the fan blades and motor with a soft cloth. If washing the fan blades is required, cover the fan motor to prevent moisture damage.

Cleaning the Interior of the Unit: When cleaning the cabinet interior, use a solution of warm water and mild soap. Avoid using steel wool, caustic soap, abrasive cleaners, or bleach, as these can damage the stainless steel surface. Door gaskets should be washed regularly, preferably weekly. To clean, remove the gasket from the door frame, soak it in warm water and soap for 30 minutes, dry with a soft cloth, and then replace it. After replacement, check the door gaskets for a proper seal. Periodically remove shelves and pilasters from the unit and clean them with mild soap and warm water. To remove pilasters, first remove the shelves and shelf brackets, then lift the pilaster up and out.

Safety and Warning: To minimize shock and fire hazards, do not overload outlets and designate one outlet per unit. Do not use extension cords. Avoid placing hands under the unit when it is being moved. Unplug the unit if it will not be used for a long period. After unplugging, wait at least 10 minutes before plugging it back in to prevent compressor damage. Do not plug or unplug the cord with wet hands. Always unplug the unit during maintenance and cleaning. Ensure the unit is properly grounded to minimize shock and fire hazards. Do not attempt to remove or repair any component unless instructed by the factory. Ensure the unit is not resting on or against the electrical cord and plug. Do not hang on the doors to prevent personal injury. Do not store flammable or explosive gases or liquids inside the unit. Do not alter or tamper with the electrical cord.
