■ Measuring cycle:
A - Time 0: start of measuring cycle.
B - From the moment the heating resistor brings the solution to the
proper temperature (35°C, stage 1), the probe electrochemically
produces iodine according to the mass of flour to be tested (stages
2 and 3).
C - Stage 4: The plateau allows to measure the exact amount of
current (hence of iodine) generated (maximum value: Im).
D - Stage 5: at the end of the plateau, the flour is introduced in the
reaction bowl and it starts fixing iodine. The current decreases
according to the iodine absorption.
E - Stage 6: 180 seconds after introduction of the flour, the probe
measures the value of the current (Ir).
