Too compacted or nely ground coee (looks like a powder and resembles smooth our when rubbed
between the ngers) will prevent water from owing through the coee, even under pressure. The resulting
coee will be dark and bitter.
On the other hand, the result of a coarsely ground or under-tamped coee will be a sour, odorless coee.
You can tamp coarse coee with more force, tamp more gently the ne ground coee.
When choosing ground coee, pay attention to the information on the packaging. It is stated here usually for
which type of coee machines the coee is intended. Choose one that has the ESPRESSO type designation - for
example, "ESPRESSO MACINATO", the lever coee machine symbol or the information that it is suitable for all
types of coee machines. Coee grinders usually have the option of setting the grinding coarseness and the
coarseness for "ESPRESSO" coee is marked. Even so, make sure that the coee has coarseness similar to the
structure of table salt.
