6. Cleaning and service
6.1 Daily cleaning after slaughtering
is completed
Continuous trouble-free operation is guaranteed
only if the brisket saw is continually kept
thoroughly hygienically cleaned. Normally the
machine should be disinfected before each
cleaning.
When doing so, follow the applicable safety and
hygiene requirements (DIN EN 1672)!

During operation, disinfect the machine with hot
water (82 °C) after every cut.
6.1.1 Cleaning the brisket saw
Clean the machine after working use with cloth,
brush and warm water (40 - 55°C) . Stubborn or
crusted dirt must be soaked. For this clean with a
cleaning agent, if possible as a foam that can be
distributed on the area to be cleaned and allow to
work for 15 - 20 min. Afterward, manually wash off
loosened dirt with warm water.
The cleaning must be done outside the slaughter
house in the service room. Remove the blade there
(see Sec. 4.1).
Do not use any caustic solvents!
Do not use steam or high
pressure washers! Do not
immerse machine in water!
