Overview

This document serves as an installation and maintenance manual for the MILLENNIAL series of electronic ovens with touch screens, manufactured by Tecnoeka. The manual is crucial for ensuring proper installation, safe operation, and effective maintenance of these professional-grade appliances.

Function Description:

The MILLENNIAL ovens are designed for professional use in industrial and professional kitchens. They are electronic ovens equipped with a touch screen interface, indicating advanced control and programming capabilities for various cooking cycles. The range includes models such as MKF 464 TS, MKF 511 TS, MKF 611 CTS, MKF 611 VCTS, MKF 664 TS, MKF 711 TS, MKF 711 VTS, MKF 1011 CTS, MKF 1011 VCTS, MKF 1064 TS, MKF 1111 TS, MKF 1111 VTS, MKF 1664 TS, and MKF 2011 TS. These ovens are intended for cooking food and are equipped with features for humidification and steam generation, suggesting versatility in cooking methods. The presence of a tray trolley in some models (MKF 1664 TS and MKF 2011 TS) indicates a design for high-volume cooking and ease of loading/unloading. The ovens are designed to produce hot smoke/vapor and odors, which are extracted through a suitable vent device, emphasizing the need for proper ventilation or an extraction hood.

Usage Features:

The ovens are intended for use by skilled personnel who have received proper training. Supervision is required during operation for safety reasons. The appliance is not suitable for use by children or individuals with impaired physical, sensory, or mental abilities, or those lacking experience or knowledge, unless supervised or instructed by a responsible person. The touch screen interface provides a modern and intuitive way to control the oven's functions. The manual highlights the importance of correct placement, ensuring a perfectly horizontal position for tabletop ovens and a flat, level floor capable of sustaining the weight for floor-standing models. For tabletop ovens, the feet are adjustable for leveling. Stacking two appliances is only permitted with a specific "STACKING KIT" supplied by TECNOEKA, emphasizing safety and structural integrity. The tray trolley, where applicable, is designed for easy insertion and extraction from the cooking chamber, with specific instructions for proper positioning to prevent malfunction. The ovens require a supply of softened drinking water for humidification and steam generation, with a mechanical filter and stopcock recommended for installation to prevent limescale formation. The water drain system is designed to convey water to an open drain or collection vessel, with specific requirements for air gaps and piping slope to ensure proper flow and prevent odors.

Maintenance Features:

Regular maintenance is crucial for extending the service life and ensuring proper operation of the appliance, with a periodic check recommended at least once a year. All maintenance operations must be performed by highly qualified personnel authorized by TECNOeka, adhering to safety regulations. Before any maintenance, the appliance must be disconnected from the mains and allowed to cool. The manual provides detailed instructions on accessing various components for inspection by removing the left side, back, and right side of the appliance. Key components accessible for inspection include magnetic door sensors, electronic components box, cooking chamber probe, terminal board, contactors, anti-interference filter, tangential motor, circular resistors, radial motors/encoder motor, dryer motor, power supply terminal board, safety thermostat, capacitors, humidification solenoid valve, humidification piping/fittings unit, steam generator (for "V TS" and "V C TS" models), peristaltic washing pump, washing solenoid valve, and washing piping/fittings unit. The LED bar protection box on the door can also be pulled to access the LED bar, display, and encoder display.

The ovens are equipped with safety thermal devices, including a manually reset safety thermostat to protect against overheating. For models with a steam generator, a separate thermostat protects the heating resistor. These thermostats must only be reactivated by a service technician after addressing the underlying anomaly. Electronic circuits are protected by fuses, which should only be replaced with equivalent fuses by a service technician after resolving the cause of the blow. The cooking chamber gasket has a rigid profile and can be replaced by simply removing the old one and inserting a new one, with soapy water recommended to facilitate assembly. The door handle closure can be adjusted if it doesn't close properly, by adjusting the position of the "nose" component. After any gasket or handle adjustment, a "seal" check is recommended by running a 100% humidification cycle at 110°C for at least 30 minutes, ensuring no steam escapes from the door. The manual also addresses residual risks, such as not using the door handle to move the appliance and the need to disconnect power before any maintenance due to electrical parts. For wheeled models, proper handling of the tray trolley is emphasized to prevent spills or tipping. Finally, the manual outlines procedures for the disposal of the appliance and packaging, stressing compliance with environmental regulations and separate collection of materials.
