Function Description
The Tecnoeka SMART OVENS are professional cooking appliances designed for various culinary tasks in commercial settings. They are equipped with features for humidification and steam generation, which are crucial for certain cooking processes. The ovens are designed to operate with specific electrical and water supply requirements, including the use of softened drinking water for humidification to prevent limescale buildup. Steam is discharged through a dedicated metal pipe from the cooking chamber, and proper ventilation, such as an extractor hood, is recommended to manage steam and odors. The ovens are built with robust materials, including recyclable metal components like stainless steel, galvanized sheet metal, iron, copper, and aluminum, making up over 90% of their total weight.
Usage Features
The ovens are designed for ease of use in a professional kitchen environment. For tabletop models, the appliance must be placed on a perfectly horizontal table or similar support, never directly on the floor. The feet are adjustable for leveling. For floor-standing models with a trolley, the appliance must be positioned on a flat, level floor capable of supporting its weight with a full load. The tray trolley is designed to slide in and out of the cooking chamber easily, and for wheeled models, it should be handled with ease on smooth floors without hindrance. The ovens are equipped with a control panel that includes warning lights and various controls for setting cooking cycles, humidification, and other functions. The door handle is designed for secure closure, and its adjustment is detailed in the manual to ensure proper sealing of the cooking chamber.
Maintenance Features
Regular maintenance is crucial for extending the service life and ensuring proper operation of the Tecnoeka SMART OVENS. A periodic check, at least once a year, is recommended. All maintenance operations must be performed by highly qualified personnel authorized by Tecnoeka, in accordance with safety regulations. Before any maintenance, the appliance must be disconnected from the mains and allowed to cool down.
Key maintenance aspects include:
- Access to Components: The manual provides instructions for accessing various components for inspection by removing the left side, back, right side, and control protection box. This includes components like magnetic door sensors, control thermostat bulbs, contactors, motors, resistors, power supply terminal board, safety thermostat, capacitors, humidification solenoid valve, and the cooking chamber lighting lamp (LED).
- Safety Thermal Devices: The appliance is equipped with a manually reset safety thermostat to protect against overheating. If activated, the power supply is cut off. Resetting the thermostat requires unscrewing a protective cap and pressing a "reset" button. It is emphasized that the safety thermostat should only be reactivated after eliminating the anomaly that caused it to trip, and this must be done by a service technician.
- Replacing the Cooking Chamber Gasket: The cooking chamber gasket has a rigid profile with retaining fins and is inserted into a perimeter seat. Replacement involves removing the old gasket, cleaning the seat, and inserting a new one, potentially wetting it with soapy water to facilitate assembly.
- Handle Closure Adjustment: If the door handle does not close properly, its "nose" (cross-shaped) position can be adjusted. This involves loosening screws, moving the support vertically, and fastening it to ensure the "nose" fits into the handle without rubbing. After adjustment, the handle should be in a perfectly vertical position when the door is closed.
- Checking the Cooking Chamber Gasket "Seal": If the gasket does not ensure proper sealing, adjustments can be made to the door's hinges and/or the handle's "nose" projection. This involves loosening hinge screws and pushing the door to ensure the inner glass leans on the gasket, or adjusting the locknut of the "nose" to create slight resistance when turning the handle. After any adjustments, a test run with a humidification cycle at 110°C for at least 30 minutes is recommended to ensure no steam escapes from the door.
- Troubleshooting: The manual includes a troubleshooting section that lists common faults, their causes, and corrective actions. This covers issues like the control panel being off, the oven not working, lack of humidity/steam production, steam escaping through the gasket, uneven cooking, and the cooking chamber lamp not working.
- Spare Parts: Tecnoeka srl ensures the availability of spare parts for a maximum of 24 months from the date of sale of the finished product to the dealer. Components replaced under warranty are covered by a 6-month warranty from the shipping date.
