Overview

This document is an installation and maintenance manual for a range of electronic black mask ovens manufactured by Tecnoeka srl. The ovens are designed for professional use in industrial and professional kitchens.

Function Description:

The ovens are primarily used for cooking, with models supporting humidification and steam cycles. Some models also feature an automatic washing function and a proofer cycle. The "black mask" designation likely refers to a specific aesthetic or interface design.

Important Technical Specifications:

Electrical Connection:

  • The ovens require connection to an electric power network, with specifications varying by model (e.g., 400V 3PH + N~, 230V 3PH~, 230V~).
  • Voltage and frequency must match the "technical data" plate.
  • A protective pole switch (e.g., circuit breaker) with minimum opening between contacts of overvoltage category III (4000V) and a differential switch is required.
  • The yellow/green earthing cable must not be interrupted by the switch.
  • Power supply voltage deviation should not exceed ±10% during operation.
  • The power supply cable must not contact hot parts of the appliance.
  • Equipotential connection is required, with a conductor section of at least 2.5mm².
  • Cable connection type is "Y", and insulation must be H07RN-F.

Water Connection:

  • Humidification/Steam: Requires softened drinking water (hardness 0.5°f to 3°f) at a maximum temperature of 30°C. Water pressure should be between 100 and 200 kPa (1.0-2.0 bar). A pressure reducer is needed if pressure exceeds 2.0 bar, and a pump if it's below 1.0 bar. A flexible hose (1.5m, ¼” female fittings), mechanical filter, and stopcock are used for connection.
  • Automatic Washing (if available): Uses a flexible polyethylene hose (2m, ¾” threaded female) with a quick fitting and special mechanical filter. Requires drinking water.
  • Water Drain: A 30mm internal diameter (DN 30) pipe, resistant to steam (90°C-100°C), is used. Metal pipes should be avoided. Piping must be rigid, without bottlenecks, and maintain a steady slope (min. 4-5%) along its length (max 1.5m). Connection to the grey water network must be via an adequate trap to prevent steam/odours.
    • Floor Ovens: Drain pipe conveys to an open (grilled) floor drain with an "air gap" of at least 25mm.
    • Tabletop Ovens: Drain pipe conveys to an open (grilled) floor drain or a "collection cup" with a height difference of at least 30cm and an "air gap" of at least 25mm.
  • Steam Drain: A special metal pipe (DN30) for steam discharge from the cooking chamber. No other pipe type can be connected. To prevent steam escape, the appliance should be placed under an extractor hood or connected to a TECNOEKA extractor/condensing hood.

Usage Features:

  • Intended for professional use and must be operated by skilled, trained personnel under supervision.
  • Not for use by children or persons with impaired physical, sensory, or mental abilities without supervision/instruction.
  • The appliance is not suitable for recessed installation and requires its 4 supporting feet.
  • For tabletop ovens, feet are adjustable for leveling.
  • Stacking ovens requires a specific "STACKING KIT" supplied by TECNOEKA. Direct stacking is prohibited.
  • Floor-standing ovens with trolley require a flat, level floor. The tray trolley must slide freely on guides, with its wheels raised slightly off the floor (not more than 5mm). The trolley is moved using a supplied grip.
  • Cooking produces hot smoke/vapour and odours, which are extracted via a vent device at the top. Placement under an extraction hood or using a TECNOEKA condensation hood is recommended.
  • The appliance should be positioned with about 10cm space from surrounding walls/appliances for air circulation and easy access for connections/maintenance.
  • Walls, shelves, counters near the appliance must be non-flammable or heat-resistant, or protected by fire retardant coating.
  • The maximum working height is 1.6 meters from the floor.

Maintenance Features:

  • Periodic checks (at least once a year) are recommended.
  • Maintenance must be performed by highly qualified personnel authorized by TECNOEKA, following safety regulations.
  • Before maintenance, disconnect from power and allow to cool.
  • Access to Components:
    • Left Side: Magnetic door sensor (right opening), electronic components box, cooking chamber probe, 12V terminal board, contactors, anti-interference filter.
    • Back: Tangential motor, circular resistors, radial motors, contactors, power supply terminal board, safety thermostat, capacitors, humidification solenoid valve, humidification piping/fittings unit.
    • Right Side: Magnetic door sensor (left opening), peristaltic washing pump, washing solenoid valve, washing piping/fittings unit.
    • Door (LED bar protection box): LED Bar, Display.
  • Safety Thermal Device: A manually reset safety thermostat is located at the back (bottom) to protect against overheating. It cuts power if tripped. Resetting requires unscrewing a protective cap and pressing a button. Only a Service technician should reactivate it after identifying and eliminating the cause of tripping.
  • Electronic Circuit Protection: Microprocessor cards are protected by fuses. Blown fuses must be replaced with equivalent ones by a Service technician after eliminating the cause.
  • Replacing Cooking Chamber Gasket: Remove the old gasket, clean the seat, and insert the new rigid profile gasket (wetting with soapy water can aid assembly).
  • Handle Closure Adjustment: If the door handle doesn't close properly, adjust the "nose" position. Loosen two screws, move the support vertically so the "nose" fits without rubbing when the handle is fully open. After adjustment, the handle should be perfectly vertical when the door is closed. This adjustment must be done with the oven perfectly horizontal.
  • Checking Cooking Chamber Gasket "Seal":
    • Hinges Side: If the gasket doesn't seal properly, loosen 6 screws on upper and lower hinges. Push the door slightly towards the hinges so the inner glass leans on the gasket. Hold and tighten the screws. Visually check parallelism.
    • "Nose" Side: If the gasket doesn't seal properly, loosen the locknut securing the "nose". Screw the "nose" clockwise by a full turn until it's perfectly horizontal. Tighten the locknut. Check for slight resistance when turning the handle; if none, repeat.
  • Post-Adjustment Check: After gasket adjustments, run the oven for at least 30 minutes at 110°C with 100% humidification to check for steam leaks.
  • Cleaning: Never clean with direct water or steam jets. Disconnect power and let cool before cleaning.
  • Detergent Handling: For automatic washing, use appropriate PPE (garments, splash visor, gloves, goggles) and follow detergent safety data sheets.
  • Tray Trolley (wheeled models MKF 1664 BM – MKF 2011 BM): After installation, ensure the trolley handles easily on smooth floors without hindrance. Improper handling can cause spills or tipping.

General Information & Warranty:

  • Store the manual with the appliance.
  • Report damaged packaging within 4 calendar days of delivery.
  • Do not modify appliance features.
  • In case of failure, switch off, close water supply, disconnect power, and contact an authorized Support Centre.
  • Installation and electrical system modifications must be done by technically skilled installers according to manufacturer instructions and national standards.
  • Inappropriate use or non-compliance with installation rules invalidates manufacturer liability.
  • Warranty is for 12 months from purchase date for professional customers, covering original faults reported within 8 days of discovery. Exclusions include transport damage, improper installation/supply systems, misuse, tampering, unauthorized repairs, non-original spare parts, negligent use, natural events, normal wear components (e.g., gaskets, bulbs, glass), and transport fees for repairs.
  • Spare parts are available for a maximum of 24 months from the sale date.
  • Italian law governs supply relationships; disputes settled by the Court of Padua.
  • Tecnoeka srl reserves the right to make technical and design changes without prior notice.
