SETTING THE AIR REGULATOR
1. The air regulator setting is based on the fat content of the cream and the desired
consistency.
2. Cream with high fat content, such as over 32%, needs a lower air ow. Cream with
lower fat content, such as up to 30%, needs a higher air ow.

It is recommended to start with a lower scale setting between 1 and
2, as the cream turns to butter too quickly when the air ow is too high
and the machine has to be completely cleaned.
3. If the cream is too runny, the air regulator must be slowly turned by further scale
markings until the desired consistency is achieved. If the cream splashes or whips
too stif y, the air regulator must be closed more tightly.
4. The air regulator (upper and lower part) must be kept clean at all times. If the air
regulator is dirty, the cream will not be whipped properly, as not enough air can mix
with the cream.
5. It is recommended to stir the cream well every 3 - 4 hours in the cream container, so
that the fat content of the cream is always evenly distributed.
