Soy Chicken and Vegetables

Ingredients:

cup soy sauce 85 ml

2 teaspoons minced ginger 10 ml
500 g sliced chicken fillets 500 g
2 cups sliced vegetables 500 ml
Method:
In a 3 litre dish mix cornflour, soy sauce, water and
ginger. Cook on HIGH for 1 minute. Add chicken
fillets and mix to coat with sauce. Cook on MEDIUM
HIGH for 5 to 7 minutes stirring halfway through
cooking. Mix in sliced vegetables. Cook on HIGH for
2 minutes. Stir and cook for a further 2 minutes on
HIGH.

Peanut Satay
Serves: 4
Ingredients:
Marinade:

teaspoon caraway seeds 2 ml
1 teaspoon ground coriander 5 ml
1 clove garlic, crushed 1
1 tablespoon brown sugar 15 ml
1 tablespoon soy sauce 15 ml
1 tablespoon lemon juice 15 ml
pinch salt
750 g boneless chicken, cut 750 g
into 2.5 cm cubes
bamboo skewers
Satay Sauce:
3 red chillies, seeded 3
and finely chopped
2 cloves garlic, crushed 2
1 cm piece ginger,
grated
1 teaspoon salt 5 ml

cup peanut butter 125 ml
1 cup water 250 ml

cup sultanas 60 ml

cup raisins 60 ml

cup vinegar 125 ml

cup sugar 125 ml

cup peanuts 125 ml

cup chutney (optional) 60 ml
Method:
Combine all marinade ingredients in a bowl with
chicken meat and marinate for at least 2 to 3 hours.
Combine all sauce ingredients in a 6-cup (1,5 litres)
jug and cook on HIGH for 8 to 10 minutes, stirring
halfway through cooking. Purée sauce in a blender
or food processor. Set aside. Preheat oven on Grill 1
for 8 to 10 minutes, or until cooked, turning once
during cooking. Serve with satay sauce.
Tip: To reheat sauce: Cook on HIGH for 1 to 2
minutes.

Honey Sesame Drumsticks
Makes: 6
Ingredients:
8 chicken drumsticks 8
1 teaspoon chopped garlic 5 ml
1 teaspoon chopped ginger 5 ml

cup soy sauce 60 ml

cup honey 60 ml
2 tablespoon sesame seeds 30 ml
Method:
Marinate chicken in above ingredients for 2 hours.
Place chicken in pie plate. Cook on MEDIUM HIGH
for 9 minutes.Turn over. Cook MEDIUM HIGH for
another 9 minutes.
