Main Fare Meats
Irish Stew
Serves: 4
Ingredients:
600 g lamb, cut into 2 cm 600 g
cubes
1 onion, sliced 1
1 carrot, peeled and 1
sliced
2 potatoes, peeled and 2
sliced
1 stalk celery, sliced 1
500 ml stock 500 ml
2 tablespoons flour 30 ml

Method:
Trim excess fat off chops. Place all ingredients in
3-litre casserole dish.
To Cook by Microwave:
Prepare as above and cover. Cook on MEDIUM-
HIGH for 20 to 25 minutes.

Prepare as above and cover. Press ,

Goulash
Serves: 4
Ingredients:
500 g lamb chops 500 g
1 onion, finely chopped 1
1 clove garlic, crushed 1
1 tablespoon butter or margarine 15 ml
1 tablespoon flour 15 ml
2 tablespoon tomato paste 30 ml

teaspoons paprika 2 ml
1 small capsicum 1
(green/red pepper), cut
into 2.5 cm cubes
1 cup beef stock 250 ml
2 tablespoon sour cream 30 ml
Method:
Trim fat and bones from meat and cut meat into 2
cm cubes. Place onion, garlic and butter or
margarine in a 3-litre casserole dish. Cook on HIGH
for 2 to 3 minutes. Add flour, tomato paste and
paprika and cook on HIGH for a further 2 minutes.
Add lamb, capsicum (pepper) and stock.
To Cook by Microwave:
Cover and cook on MEDIUM-HIGH for 24 to 26
minutes. Stir in sour cream and serve with
vegetables.
To Cook by Combination:
Prepare as above, cover and cook on Combination
1 for 40 to 45 minutes. Stir in sour cream and serve.

Casserole
Lamb Chops with Spicy Sauce
Serves: 16
Ingredients:
Marinade:

cup medium or dry sherry 60 ml
3 tablespoon tomato paste 45 ml
2 tablespoon lemon juice 30 ml
2 cloves garlic, crushed 2
1 teaspoons chilli powder 5 ml
1 teaspoons coriander powder 5 ml
1 teaspoons ground ginger 5 ml
1 tablespoon finely chopped fresh 15 ml
parsley
freshly ground black
pepper to taste
8 lamb loin chops 8
(approx. 800 g)
Method:
Combine all marinade ingredients to form a thick
mixture. Place chops in a single layer in a shallow
dish and pour marinade mixture over. Allow to
marinate for 6 to 8 hours. Remove chops from
marinade (reserving this mixture) and place chops
on a rack in a shallow dish. Cook on MEDIUM-HIGH
for 8 to 10 minutes, turning over halfway through
cooking. Place marinade mixture into a jug and heat
on HIGH for 1 to 2 minutes. Arrange chops on
serving plate then pour the sauce over. Serve
garnished with parsley or watercress.
To Cook by Grill:
Prepare as above. Preheat oven on Grill 1. Place
chops on low rack and cook on Grill 1 for 12 to 14
minutes, turning over halfway through cooking.

Chilli Beef
Serves: 4 to 6
Ingredients:
500 g beef mince 500 g
1 diced onion 1
1 teaspoon minced garlic 5 ml
1 x 35 g packet chilli 1 x 35 g
seasoning mix
400 g can tomato puree 400 g
440 g can kidney beans,
drained 440 g
Method:
Place mince, onion, garlic, chilli powder and tomato
puree in a 3-litre dish. Mix well. Cook on HIGH for
10 minutes. Stir halfway through cooking. Add
kidney beans and cook on HIGH for a further 10
minutes. Stir halfway through cooking. Serve in taco
shells with chopped tomatoes and shredded lettuce
or with a salad and crusty bread.
