5. PERIODIC CHECK OF EGGS DURING INCUBATION
(CANDLING)
The candling is a technique that allows to check if the eggs are fertilised or not and to assess the development
of the embryo. It is a very important operation, because dead embryos, if not identied and eliminated, pose a
serious bacteriological risk for the current and subsequent incubations. This operation should be carried out in
a dark room, using a strong beam (e.g. an egg candler) on the egg. It shall be repeated two times during the
incubation cycle, the rst one the eighth / tenth day and then 3 days before the eggs hatch, depending on the
type of egg. The unfertilized eggs or whose embryo is dead must be discarded. It is recommended, especially
in case of inexperience, to perform a preliminary candling before starting the incubation process, in order to
verify if the eggs are cracked or compromised. The candling is a delicate and complex operation that can
lead to eliminating fertilised eggs by mistake. Take the eggs one by one from the incubator and check them
immediately. The egg can remain out of the incubator for a maximum of 2 minutes. With a little experience,
through the appropriate tool, it is possible to check without removing the eggs from the incubator.
In this case, open the incubator and place the egg candler on each egg: the beam of light will allow you to see
the embryo distinctly.
Warning: DO NOT turn or shake the eggs violently. This would lead to the rupture of the chalazae and the
consequent death of the embryo.
