BASIC SOFT SERVE
375 ml cream
80 g honey
2 egg yolks
1 egg
pinch of salt
Combine all ingredients just before
pouring into the canister and staing
the cycle.
375ml cream, vanilla bean and honey
(combined over heat a day in advance
and refrigerated). Just before staing
the cycle, fold in egg yolk, egg and salt.
Place into canister and sta the cycle.
Vanilla so serve
375 ml cream
½ vanilla bean cut lengthwise

Chocolate so serve
400 ml cream
40 g milk chocolate
40 g dark chocolate
1 egg yolk
1 egg
pinch of salt
Combine cream and chocolate over
heat a day in advance. Refrigerate to
cool. Just before staing the cycle, fold
in egg yolk, egg and salt. Place into
canister and sta the cycle.
Combine cream, vanilla sugar, and
honey. Just before staing the cycle,
fold in egg yolk, egg, salt and raspberry
purée. Place into canister and sta the
cycle.
Raspberry so serve
375 ml cream
½ packet of vanilla sugar
80 g honey
1 egg yolk
1 egg
pinch of salt
175 ml pureed raspberries
