1. Professional: Turn mode knob to Convection
Transitional/Contemporary:
a. Touch GUI.
b. Touch QUICKSTART.
c. Scroll to Convection. Touch Convection.
2. Professional: Turn slew knob to desired
temperature.
Transitional/Contemporary:
a. Scroll to approximate temperature - within 25° F.
b. Touch + or - to adjust temperature in 5°
increments.
3. Set Probe, Timed Bake or Delayed Start.
4. Touch START.
Convection Roast - All ovens 240/208 VAC
Pre-Heat 2:
From 65° F below set point to set point
Bypassed if oven temperature is above 500° F.
Broil element 0 to 40 seconds
Right convection element 40 to 60 seconds
Left convection element 40 to 60 seconds
Right convection fan 0 to 60 seconds
Left convection fan 0 to 60 seconds
Lower Band
Target temperature is 15° F above set point
CFH temperature is 3° F
Broil element 40 to 60 seconds
Right convection element 0 to 35 seconds
Left convect element 0 to 35 seconds
Right convection fan 0 to 60 seconds

c. Scroll to Convection Roast. Touch Convection

2. Display states “Probe cook is recommended. Connect
a probe or touch CANCEL to exit probe cook. Insert
probe or touch CANCEL.
3. Professional: Turn slew knob to desired
temperature.

a. Scroll to approximate temperature - within 25° F.
b. Touch + or - to adjust temperature in 5°
increments.
4. Set Probe, Timed Bake or Delayed Start.

Warm - All ovens 240/208 VAC
Lower Band

Warm Mode Activation
