      Untrimmed edges with dough residue can occur if the forming mold and roller are not connected properly. Lightly tighten the forming mold fix screws evenly, turning little by little to avoid damage. Also, check for dough residue on the forming mold or roller. If present, adjust the top and bottom scrapers closer to the forming mold and roller to remove the residue.

Another cause may be impurities or residue in the dough or dough extrusion system, so check for these in the mixer or parts of the dough extrusion system.

Also, check the space between the roller and roller side plate; if it's too big, rotate the roller nuts clockwise to move the roller side plates closer to the roller and remove any dough residue.

      If the product sticks to the forming mold, it may be because the dough is too soft. The best percentage of water for dough is 37-40% of flour weight. If using soft dough, dust the forming mold with dry flour. If operating for a long period, use the cooling system. Also, ensure the upper scraper is adjusted to contact the forming mold more closely to prevent dried dough residue on the cutting edges. Avoid using pure tapioca flour or corn starch for dry flour; instead, mix 50% tapioca flour or cornstarch with 50% wheat flour, or simply use 100% wheat flour.
