15. Maintenance and Cleaning
CAUTION: BEFORE ANY MAINTENANCE AND CLEANING OPERATION, SWITCH OFF
THE VOLTAGE TO THE CASE USING THE GENERAL SWITCH
Foodstuffs can deteriorate because of microbes and bacteria. Respecting the hygiene and
sanitation regulations is essential for guaranteeing the health of the consumer, in addition to
respecting the cold chain of which the shop is the last controllable ring.
The proper cleaning of the refrigerated case is as follows:
• Clean the external parts (Daily / Weekly)
• Clean the internal parts, Shelves and flat surfaces (Daily / Weekly)
• Clean the external and internal parts of the case using neutral detergents for
domestic use or soap and water.
• Rinse with clean water and dry with a soft cloth.
• Do NOT use abrasive products and solvent which can in any way alter the case
surfaces.
• Do NOT spray water or detergent onto the electrical parts of the case.
• Do NOT use alcohol to clean the plexi-glass parts.
The cleaning of the internal parts of the case is necessary to destroy the pathogenic micro-
organisms in order to ensure stock protection. Before starting the internal cleaning of a case or
a part it is necessary to:
• Completely empty it of the stock it contains.
• Disconnect the voltage to the case using the master switch.
• To protects hands during the cleaning operations, it is advisable to use working
gloves.
• Continue by removing the removable parts, such as deck pans, various grills etc.
that must be washed with warm water and detergent containing a disinfectant, and
completely dried.
• Carefully clean the bottom basin, getting rid of all foreign objects that have fallen
onto the bottom floor through the return air grill.
• Inspect for unusual or excessive amounts of ice buildup, if problem persist request
the services of a licensed refrigeration technician.
• Regularly clean the drain area, lifting-up, when necessary, the fan plenum.
• Once the cleaning operations are finished, reinstall the removable elements
(naturally dried) and switch the electrical power supply back on. Once the internal
working temperature has been reached, it is possible to reload the case with the
products to be displayed.
