and
sanitize
removed
parts.
wash
these
parts
in
hot
water
with
detergent,
rinse
in
hot
water
and
rinse
again
in
sanitizing
solution.
Let
the
parts
air
dry.

wool
type
soap
pads
on

DO
NOT
use
any
metal
objects
to
scrap
stubborn
deposits
of
sliced
product
from
knife.

Clean
front
of
knife,
moving
from
center
outward.

Clean
back
of
knife.
Repeat
with
clear
water.
Sanitize
and
allow
to
dry.
Apply
Berkel
oil
sparingly.
