How it works:
1. Thermostat-controlled heating
elements (A) are located around the
perimeter of the fry pot, above the
bottom level.
2. Fresh or frozen food is placed in
fry basket and lowered into preheated
shortening. Fryer lid is closed and
latched (B), and spindle is locked
down (C), forming a secure, airtight
seal.
3. A small amount of moisture from
food is released immediately, building
pressure in closed steam zone (D) to
12 psi.
4. A pressurized cooking environ-
ment (E) prevents further moisture
from being released, sealing in foods
natural juices and locking shortening
out. Pressure increases turbulence at
lower temperatures for faster, energy
efficient cooking.
5. Rectangular fry pot (F) promotes
random turbulence and tumbling
action, resulting in more even
cooking.
6. “Cold” zone (G) below heating
source allows cracklings to accumu-
late without scorching.
7. When filtration cycle is activated,
used shortening drains through a
disposable filter envelope in the
built-in filtration system (H).
Switch-activated pump returns hot
filtered shortening to fry pot for
immediate use.

How Henny Penny Pressure Fryers Work

Heating and Sealing Mechanism

Thermostat-controlled heating elements and a sealed lid create a pressurized cooking environment.

Pressure Cooking Environment

Seals in food's natural juices, locks shortening out, and enables faster, energy-efficient cooking.

Fry Pot Design and Cold Zone

Rectangular pot promotes turbulence for even cooking; a cold zone collects cracklings without scorching.

Integrated Filtration System

Drains used shortening through a filter and returns hot, filtered shortening for immediate reuse.

Top Ten Reasons to Pressure Fry

Seals in Natural Juices

Ensures food remains moist and flavorful by sealing in natural juices during frying.

Less Greasy Food

Less moisture escape means less shortening absorption, resulting in less greasy fried food.

Faster Cooking and Less Energy

Improved heat transfer cooks food faster and requires less energy to maintain shortening temperature.

Reduces Flavor Transfer

Sealed-in juices and locked-out shortening minimize flavor and odor transfer between products.

More Productive

Cooks more food in less time and space, offering higher production per square foot.

Cleaner Operation

Captures oil-laden steam, reducing greasy film and odors in surrounding areas.

Uses Less Shortening

Lower temperatures and less absorption extend shortening life.

Less Food Shrinkage

Retains moisture and juices, resulting in less shrinkage and a more tender product.

More Menu Items

Versatile method suitable for cooking a wide range of items from poultry to pastries.

Consistently Great Taste

Advanced fryers deliver consistent flavor and appearance, load after load.
