Overview

This document describes the PFE-500 Electric Pressure Fryer with pump, a commercial kitchen appliance designed for frying various foods under pressure.

Function Description

The PFE-500 is an American-style pressure fryer that incorporates advanced techniques from both Western and traditional Chinese frying methods. Its primary function is to fry chicken, fish, spareribs, mutton, and other meats and vegetables efficiently and safely. The machine utilizes stainless steel construction, electronic time and temperature control, and an automatic air expulsion system. A key feature is its integrated oil filter, which effectively removes impurities from the oil, enhancing the quality of fried food and extending oil life. This makes the PFE-500 suitable for hotels, guesthouses, restaurants, factories, and dining rooms, offering advantages such as low energy consumption, pollution-free operation, convenience, and high efficiency.

Usage Features

Installation and Debugging:

The fryer should be placed in a dry, clean, and well-ventilated area. During operation, the movable castors must be cushioned, balanced, and fastened. High indoor humidity should be avoided to prevent decreased electrical insulation. An exhaust device may be necessary. The machine requires a 3N~400V power supply, and the neutral conductor (N) must be connected carefully to prevent damage. A dedicated cutoff switch should be installed on the input line, and all electrical facilities must meet the machine's capacity requirements. Installation should be performed by an eligible technician. The grounding terminal must be reliably grounded with a section of at least 2.5 mm². If multiple machines are in use, an equipotential device should be installed between them. After conveyance, all loosened parts should be tightened during installation and debugging.

Preparation and Operation:

Before turning on the ON switch, at least 25L of oil must be poured into the pot, ensuring the oil level is about 10mm higher than the heaters. Before pouring oil, ensure the oil drain valve and oil filter valve at the bottom are closed.

  1. Heating: Turn the power switch to the "Heating Position (Power)" and set the desired temperature and time. The drain valve should be off. The machine will begin heating the oil. For cold oil, preheating takes 20-30 minutes; for hot oil, 10-15 minutes. The oil temperature must exceed 150°C before frying. It is recommended not to lid the cover during cold oil heating and to manually stir the oil for faster, even heating.
  2. Preheating Raw Oil: New vegetable oils (except peanut oil) should be preheated to 140-160°C for 10-20 minutes to eliminate raw oil smell and cause bubbling. During this process, no food should be in the boiler, and there will be no vapor or pressure indication.
  3. Pressure Control: The automatic overflow valve is typically set to 0.07-0.08MPa. If the pressure gauge exceeds 0.09MPa and continues to rise, manually discharge air by moderately unbolting the air-release valve to maintain pressure between 0.08-0.09MPa.
  4. Frying Process: Once preheated, reset the working temperature and time. Place the prepared food in the frying basket, then quickly and balancedly lower the basket into the fry pot using the special "handle." Close the lid, ensuring it is balanced, fasten the screws with proper strength, and confirm the air-release valve is closed. The pressure gauge will slowly rise. At 0.07-0.08MPa, the overflow valve automatically discharges air to maintain constant pressure. When the set temperature and time are reached, the machine automatically releases air. Once the air is fully discharged and the pressure gauge reads "0," loosen the fastening screw, press down the crossbeam, loosen the crossbeam hook, and open the cover.
  5. Opening and Closing the Cover: To close, press the down plank to ensure the lid is well-closed. Open the hook lock to fasten it securely with the pot's frontage. Spin the spindle clockwise, pressing firmly to ensure the red or black ball aligns with the hook lock. To open, loosen the spindle counterclockwise, press (A), and try to open the hook lock.
  6. Safety During Operation: When opening the cover, stand to the side to avoid hot air scalding. Operators must be knowledgeable about machine operation for safety. Workers should not leave the machine unattended and must supervise the production process. In case of abnormal situations, stop the machine immediately, identify the cause, and resolve it before resuming operation.
  7. Oil Filtering: Before filtering, prepare an oil tank with a filter envelope and turn off the power. Open the fryer lid, remove the basket, open the Drain Valve to pour oil into the oil tank. Then close the Drain Valve and open the Pump Valve. Turn the power switch to the "Pump" position to start pumping oil back into the pot. Once pumping is complete, turn off the power to "0." Remove the connector, clean the oil tank, and replace the oil filter envelope for next use.

Safety Points for Attention:

  • A grounding device (2.5mm² copper wire to ground bolt) is mandatory for operation.
  • Never heat the fryer without oil or if the oil level is below the heating elements, as this will burn them out. Do not wash hot heating elements with cool water to prevent explosion.
  • Latch the lid before heating. Do not operate the securing hook or drain oil before ensuring there is no pressure in the frypot (pressure gauge shows "0"). Wait 30 seconds after pressure reads "0" before opening the lid to prevent explosion.
  • Do not use hard tools to strike the fryer lid or mouth to maintain good sealing.
  • The rubber seal of the fryer lid should not be dismantled by the user, as it may affect sealing. Close the fryer lid when not in use, but not too tightly, to prevent seal aging.
  • Cut off power when the machine is not working to prevent explosions due to incorrect operation.

Maintenance Features

  1. Overflow Valve Cleaning: Clean the overflow valve twice weekly. Screw off the lid, clean the gravity block, and ensure it moves freely and opens/closes flexibly.
  2. Electrical Checks: Monthly, check the general electricity and screws of the power line and joints. Tighten any loose connections to ensure good contact and sensitive control.
  3. Heating Element Cleaning: After daily use, clean any grease from the electro-thermal pipe in the boiler and cabinet to maintain hygiene and extend machine life.
  4. Rubber Gasket Replacement: If the rubber gasket shows signs of aging or ineffectiveness after prolonged use, it should be replaced. Loosen the four fastening screws on the cover's glue bar, carefully remove the old glue bar from the groove, insert new sealing rings, and fasten the screws.
  5. Overheating Protector: The machine is equipped with an overheating protector. If the temperature controller fails and the oil temperature reaches 250°C, the temperature limiter will cut off heating power for safety. Operators should identify and resolve the cause of overheating. If needed, press the reset key on the "temperature limiter" to restart the machine.
