Why is the product color not correct in my Henny Penny Fryer?

The color of your fried product may be incorrect due to several reasons: * The temperature may be too high or too low. Check the temperature setting, and allow proper preheat time. * The shortening might be too old or too dark. Consider changing or filtering the shortening. * The temperature probe may be faulty; remove and replace it. * Breading the product too far in advance. Bread product closer to the actual frying period. * Low gas pressure; have gas pressure checked going to burners. * The wrong cook button was pushed. Be sure to select the correct amount of product to be cooked.
