Overview

The Instant Pot® Duo Gourmet™ 5.7L Multi-Use Pressure Cooker is a versatile kitchen appliance designed to simplify cooking for busy families and professionals. It combines multiple cooking functions into one device, allowing users to prepare a variety of healthy and delicious meals with ease and in less time.

Function Description:

The Instant Pot Duo Gourmet™ is primarily a multi-use pressure cooker, capable of cooking food under pressure to significantly reduce cooking times. Beyond pressure cooking, it offers a range of other smart programs, including slow cooking, sautéing, making yogurt, and sous vide cooking. This broad functionality allows it to replace several kitchen appliances, making it a compact and efficient solution for diverse culinary needs.

Usage Features:

The device is designed for intuitive operation, starting with its initial setup. Users are guided to remove all packaging, ensure all parts are accounted for, and place the cooker on a stable, level surface away from external heat sources. It is crucial to use only the Instant Pot® Duo Gourmet™ lid with the cooker base to prevent injury or damage. Before first use, the cooker should be washed according to the "Care, Cleaning and Storage" instructions.

Opening and Closing the Lid:

The lid mechanism is designed for ease of use and safety. When the cooker is plugged in, it plays a jingle when the lid is opened or closed. To open, grip the handle and turn the lid counter-clockwise until the "▼" symbol on the lid aligns with the "▲" symbol on the cooker base, then lift the lid up. To close, align the "▼" symbol on the lid with the "▲" symbol on the cooker base, lower the lid into the track, and turn it clockwise until the "▼" symbol on the lid lines up with the "▲" on the base. Always check the lid for damage before cooking.

Sealing Ring:

The sealing ring is critical for creating an airtight seal during pressure cooking. It can be easily removed by pulling it out from behind the sealing ring rack. To install, place the sealing ring over the rack and press it into place, ensuring it is snug. An extra sealing ring is provided, allowing users to designate one for sweet dishes and another for savory, preventing flavor transfer.

Float Valve:

The float valve indicates the pressure status of the cooker. It pops up when the cooker is pressurized and lowers into the lid when depressurized. To remove, place a finger on the flat top of the float valve, turn the lid over, detach the silicone cap from the bottom, and remove the float valve. To install, drop the float valve into its hole on top of the lid, place a finger on its flat top, turn the lid over, and attach the silicone cap to the bottom. The float valve and silicone cap must be installed for pressurized steam to seal.

Anti-Block Shield:

The anti-block shield prevents food particles from clogging the steam release pipe, aiding in pressure regulation. To remove, grip the lid and press firmly against the side of the shield until it pops off. To install, place it over the prongs and press down until it snaps into position. The anti-block shield should be cleaned frequently.

Steam Release Valve:

The steam release valve is essential for venting pressure. To remove, pull it up and off the steam release pipe. To install, place it on the steam release pipe and press down firmly. It sits loosely but should remain in place when the lid is turned over. It should be removed for cleaning only, but cleaned frequently.

Inner Pot:

The stainless-steel inner pot is where all food is cooked. It must be placed into the cooker base before cooking, and food should always be placed in the inner pot, not directly into the cooker base. The inner pot has markings for PC MAX – 2/3 (Pressure Cooking Maximum) and – 1/2 lines to guide users on safe filling levels, especially for foods that foam, froth, or spatter.

Condensation Collector:

The condensation collector gathers excess water and should be installed before cooking and emptied after use. To install, align the grooves on the collector over the tabs on the back of the cooker base and push it into place. To remove, pull it away from the cooker base.

Venting Methods:

The Instant Pot Duo Gourmet™ offers two venting methods:

  1. Natural Release (NR): The quick release button remains in the Seal position (up), allowing pressure to dissipate naturally over time. This method is recommended for foods that expand, such as soups, stews, chilis, beans, and grains.
  2. Quick Release (QR): Pressing the quick release button down until it clicks releases a continuous stream of steam through the steam release valve until the float valve drops. If spatter occurs, the button can be flicked to reset to Seal position and tried again after a few minutes; if spatter continues, NR should be used.

Initial Test Run (Water Test):

A water test is recommended before first use to familiarize users with the cooker's operation. This involves adding 750ml of water to the inner pot, securing the lid, selecting the "Pressure Cook" smart program, setting the cook time to 5 minutes, and observing the pressurization and depressurization process.

Controls:

  • Cancel: Stops any smart program and returns the cooker to Standby, displaying "OFF."
  • Delay Start: Postpones cooking for up to 24 hours. Users select a smart program, adjust cook time if desired, then press Delay Start and use the -/+ keys to set the delay duration.
  • Keep Warm: On by default for most smart programs (except Sterilise, Sauté, Yogurt, and Sous Vide). It can be turned off by pressing Keep Warm after selecting a smart program. Food should not be kept warm for more than 10 hours, and thick/starchy foods should be stirred every 40-60 minutes for even heat distribution.
  • Sound On/Off: In Standby, pressing and holding the "+" key displays "S On" for sound on, while pressing and holding the "–" key displays "SOFF" for sound off. Error code alerts cannot be silenced.
  • Temperature Units (°F to °C): Pressing both "+" and "–" buttons simultaneously, quickly twice, toggles between Fahrenheit and Celsius. Temperature is only displayed within the Sous Vide smart program.

Smart Programmes:

The Instant Pot Duo Gourmet™ features a variety of smart programs with adjustable settings (Less, Normal, More) and specific recommendations:

  • Pressure Cook: Manual programming with adjustable pressure levels (High/Low) and cook times.
  • Soup/Broth: Designed for clear liquids, with NR recommended for high-starch soups.
  • Meat: Settings for various meat textures (Soft, Very Soft, Fall-off-the-bone) with manual cook time adjustment.
  • Stew: Settings for different stew textures (Soft, Very Soft, Fall-apart) with NR recommended for starchy/thickened foods.
  • Sterilise: For utensils, tempered glass, heat-resistant plastics, and low/high-pressure hot water bath canning of acidic fruits and vegetables.
  • Rice: Settings for white rice textures (Tender, Normal, Softer). QR or NR after 10 minutes of natural release is recommended.
  • Brown Rice: Settings for brown rice textures (Tender, Normal, Softer). QR or NR after 10 minutes of natural release is recommended.
  • Porridge: For oats (steel cut or rolled), white rice porridge/congee, and mixed grain porridge. NR is recommended for expanding foods.
  • Bean: Settings for bean textures (Tender, Normal, Softer). NR is always used for beans/legumes, ensuring they are fully submerged.
  • Chili: Settings for chili without meat, with meat, or chunky chili. NR is recommended for thick sauces or expanding foods.
  • Slow Cook: Settings for various cooking durations (8+, 6+, 4+ hours), corresponding to Low, Medium, and High on common slow cookers.
  • Sauté: For simmering, reducing, pan searing, or browning meat. The lid should not be used during Sauté. Maximum 30 minutes to prevent overheating. Add ingredients when the display switches from "On" to "Hot."
  • Yogurt: For low-temperature fermentation (Jiu Niang), fermenting yogurt, and pasteurizing milk (minimum 72°C). 8 hours is standard for fermentation.
  • Sous Vide: For cooking eggs, fruit, vegetables, fish, poultry, pork, beef, and lamb at precise temperatures (25-90°C). Requires the inner pot with a steam rack and sealed pouches. The pressure cooking lid must be fully closed or completely removed for optimal temperature control.

Sous Vide Cooking Steps:

  1. Place the steam rack in the inner pot.
  2. Fill the inner pot with warm water up to the PC MAX – 2/3 line.
  3. Insert the inner pot into the cooker base.
  4. Connect the power cord.
  5. Place and close the lid.
  6. Select "Sous Vide."
  7. Adjust temperature using -/+ keys (1°C increments).
  8. Press "Sous Vide" again to toggle to cook time and adjust.
  9. After 10 seconds, the cooker beeps and displays "On" to indicate heating.
  10. Season food, place in individual sealed pouches, and remove air.
  11. Once water temperature is reached (cooker beeps), remove the lid and immerse pouches, ensuring they are submerged but seals remain above water.
  12. Place and close the lid. For long cooking times, ensure water level remains above pouches. If adding water, heat it to the same temperature as the water in the inner pot.
  13. Once complete, the display shows "End." Open and remove pouches.
  14. Check doneness with a thermometer. "Reverse searing" after cooking is recommended for enhanced flavors.

Maintenance Features:

Regular cleaning and inspection of components are crucial for safety and performance. The sealing ring should be inspected for cuts or deformations and replaced every 12-18 months or if damage is noticed. The anti-block shield and steam release valve should be cleaned frequently. The inner pot should be checked for dents or deformations. The condensation collector should be emptied after each use.
