10.5. Cleaning Schedule
• Your cleaning schedule should be set according to your mix manufacturer’s instructions/recommendations.
Each mix will have cleaning time frame stipulations to ensure optimum product production and product safety.
PLEASE ENSURE YOU FOLLOW THESE INSTRUCTIONS.
• Each time you change your mix please ensure you read the manufacturers recommendations regarding cleaning
the machine.
• Please ensure that you and your staff have a regular cleaning schedule.
• Please ensure that all persons using the machine are aware of the cleaning schedule.

11. Equipment Operations
11.1. Production
• Switch your BRÜLLEN i18 on, the indicator will show the temperature of the hopper/s and refrigeration freezer
cylinder/s. The numbers on the top of the display for the hopper/s while the one in the middle are for the
refrigeration freezer cylinder/s. For example, if the indicator shows 12 and -2◦, it means the hopper temperature
is 12◦ while the refrigeration freezer cylinder temperature is -2◦.
• Ensure pistons are closed before pouring prepared mix into the hoppers. The liquid surface should not be higher
than the top of the agitator post. Ensure that all air bubbles have escaped from freezer cylinder/s before
inserting feed tubes into feed holes in the bottom of the hopper/s
• When inserting the feed tubes, there are four options for overrun. Select this by positioning the inner feed tube
into position
Position 1 50% - 60% overrun*
Position 2 40% - 49% overrun*
Position 3 30% - 39% overrun*
Position 4 15% - 29% overrun*
* Please Note: These percentages are to be used as a guide only. These percentages are based on a water
based vanilla powder mix. Results may vary depending on the type, composition and consistency of mix used.
Please discuss your requirements with your Brüllen representative.
• Press PRODUCTION mode button, the machine will then start its cool down cycle. A percentage will be
displayed indicating the progress of cooling. Once the display reads FINE, product can be drawn.
• To end production mode, press STOP button.
11.2. The Hardness Setting of Product
By increasing the hardness of the mix, it will provide a harder, colder product (this can be effective during very busy times)
• Press the stop button
• Hold down the “M” button until 1-(value) Is displayed
• You can then increase or decrease the value of the hardness with the up/down arrows
• A higher number will increase the hardness of the Product
• A lower number will decrease the hardness of the Product
• Please only adjust in small increments and test results once machine has registered FINE
11.3. Overnight/Precooling mode
When production mode is no longer required, and hoppers still contain mix, press OVERNIGHT/PRECOOLING button. This
will keep freezer cylinders and hoppers at an average of 2◦C (recommended) unless set otherwise.
