standard focusses on the test methods for dishwashers, which permit the result of the wash to be verified from the
point of view of food hygiene. On the one hand, the test methods established may help device manufacturers to verify
the performance of their devices with respect to a perfectly hygienic wash result. On the other hand, the standard food
inspection may use the above standard for the detection of any hygiene deficiency. In addition to the equipment
manufacturers and the control authorities, the standard is also directed at users from the food industry, in particular in
the field of public catering. Here, the hygienic and professional operation for the cleaning and disinfection of the
dishes must be guaranteed together with the care and maintenance of the dishwasher. Hygienic cleaning of the
washware in accordance with legal requirements. The document has been prepared by the Standards Committee for
Food and Agricultural Products, Working Group NA 057-02-01-08 AK "Hygiene requirements for the mechanical
