This appliance has been UKCA/CE marked based on compliance with the relevant Electrical and
Electromagnetic Compatibility (EMC) Regulations/Directives for the voltages stated on the data plate.
The appliance MUST BE installed by a competent person in compliance with the INSTALLATION AND SERVICING
INSTRUCTIONS and National Regulations in force at the time.
UK regulations are listed on the front of the Installation and Servicing Instructions.
PREVENTATIVE MAINTENANCE CONTRACT
To obtain maximum performance from this unit regular servicing of the appliance should be undertaken to ensure
correct operation, it is functioning as intended, and safe to use. We recommend servicing in accordance with SFG20
Maintenance Schedules and as a minimum, after 2,500 hours of use, or annually, whichever comes first and that a
maintenance contract be arranged with an appointed service contact. Visits may then be made at agreed intervals
to carry out adjustments and repairs.
WARNING THE APPLIANCE MUST BE EARTHED.
Upon receipt of the User’s Instruction manual, the installer should instruct the responsible person(s) of the correct
operation and maintenance of the appliance.
CAUTION: Read the instructions before using the machine.
This equipment is ONLY FOR PROFESSIONAL USE, and shall be operated by QUALIFIED persons. It is the
responsibility of the Supervisor or equivalent to ensure that users wear SUITABLE PROTECTIVE CLOTHING and to
draw attention to the fact that, some parts will, by necessity, become VERY HOT and will cause burns if touched
accidentally.

At end of unit life, dispose of appliance and any
replacement parts in a safe manner, via a licensed waste

The Dominator Plus Electric Range Appliances are designed for professional use and must be installed by a competent person according to national regulations. This manual covers various models, including hotplate ranges, general-purpose ovens, and boiling tables, all of which are thermostatically controlled.

Function Description:

The appliances offer a range of cooking capabilities:

  • Hotplate Ranges: These units combine hotplates with an oven. Models include:

    • E3101/D Three Hotplate Range: Features 3 rectangular, heavy-duty hotplates and a natural convection oven.
    • E3101/D Four Hotplate Range: Equipped with 2 circular, energy-saving, solid pattern hotplates, 2 rectangular, heavy-duty hotplates, and a natural convection oven.
    • E3101P/D Six Hotplate Range: Provides 6 circular, energy-saving, solid pattern hotplates and a natural convection oven.
    • E3101OTC Three Hotplate Range: Includes 3 rectangular, heavy-duty hotplates and a fan-assisted oven.
    • E3101OTC Four Hotplate Range: Features 2 circular, energy-saving, solid pattern hotplates, 2 rectangular, heavy-duty hotplates, and a fan-assisted oven.

Important Technical Specifications:

  • Compliance: UKCA/CE marked, complying with relevant Electrical and Electromagnetic Compatibility (EMC) Regulations/Directives.
  • Oven Shelves: All range and general purpose ovens are supplied with 5-position, nickel-plated shelf hangers and 2 safety pattern, anti-tilt oven shelves.
  • Tray Size (Oven): Ovens accept gastronorm trays (530mm x 325mm) or conventional trays up to 535mm x 400mm.
  • Hotplate Controls: All hotplates are controlled by 6-position heat switches, offering variable temperatures from Setting 1 (lowest) to Setting 6 (highest).
  • Circular Hotplates: Energy-saving circular hotplates include a temperature limiting device that automatically cuts off part of the element circuit if the plate overheats without a pot. Full power is restored when a pot is placed on the hotplate.
  • Oven Thermostat: Oven temperatures are thermostatically controlled. An amber neon indicator shows when current is supplied to the elements, turning off when the selected temperature is reached.
  • Oven Light (OTC models): Internal oven lights are controlled by a round black push button on the control panel.
  • Drop Down Door (Models with): Maximum weight on an open door panel should not exceed 20kg.

Usage Features:

  • Hotplate Operation:
    • A neon indicator lamp adjacent to each control indicates when the hotplate is ON.
    • Good contact between the hotplate and utensil is essential for efficient operation.
    • Ground-based pots should be used, and the hotplate surface must be in good condition.
    • Spillage should be removed promptly to prevent burning and difficulty in cleaning.
    • The spillage tray below hotplates can be withdrawn for emptying and cleaning when cool.
    • Caution: The spillage tray becomes very hot during operation.
    • Important: Do not leave hotplates switched on when not in use, especially at high settings, to conserve electricity and ensure long life. If a plate must be kept hot, use a low setting (no greater than 3).
  • Oven Operation:
    • Pre-heating: Allow at least 45 minutes for a cold oven to pre-heat, regardless of temperature setting. For fan-assisted ovens, allow at least 15 minutes.
    • Insert food items quickly and close doors firmly to maintain temperature.
    • DO NOT leave oven door(s) open for prolonged periods while the oven is on.
    • Shelf Usage: When using two shelves, space them at least two runners apart (e.g., positions 2 and 4, with 1 at the top). When using three shelves, positions 1, 3, and 5 are recommended.
    • Tray Placement: Always locate trays and dishes centrally upon shelves. Trays must not overhang the shelf, as this affects heat circulation.
    • Chef's Tips:
      • Always pre-heat the oven to the desired temperature.
      • Use appropriate trays and avoid overloading the oven.
      • Place food centrally on the shelf.
      • Avoid opening oven doors during cooking.
      • Ensure doors are fully open when removing food.
      • Cooking times depend on pre-heat temperature, food temperature (frozen, chilled, ambient), shelf load, oven load, and food size/weight.
      • Fan-assisted oven cooking temperatures should be lower than conventional ovens, and cooking times may differ.

Maintenance Features:

  • Safety First: BEFORE ANY CLEANING, ISOLATE THE APPLIANCE FROM THE MAINS POWER SUPPLY AT THE ISOLATOR SWITCH.
  • Cleaning Restrictions: The appliance MUST NOT BE CLEANED WITH A JET OF WATER OR STEAM.
  • General Cleaning:
    • Clean with hot, soapy water as often as possible, then rinse and dry thoroughly.
    • Remove grease with fine steel wool or proprietary cleaning pads like 'Brillo'.
    • Use nylon pan scrubbers with care on enamelled surfaces to avoid scratches.
    • Note how parts are arranged before removal for cleaning, and replace them in the same positions.
  • Oven Door Catch:
    • Lubricate occasionally by pushing down the roller and applying high melting point lubrication inside the catch and onto the roller.
    • To adjust the catch if the door has closing issues: push down on the roller (1), then turn right (2) to adjust down or left (3) to adjust up.
  • All Ovens (not OTC):
    • Clean while still warm.
    • The enamelled base plate lifts out, and runners can be removed. Grip the bottom, lift until the lower end leaves brackets, then pull towards the center and lower it.
    • Two oven drip trays are provided and are removed by sliding them out from the front.
  • OTC Oven:
    • Clean while still warm.
    • Internal and external surfaces are stainless steel. Glass viewing panels are fitted within the doors.
    • Remove light staining and spillages daily with a damp cloth and soap detergent. Rinse with a soft cloth.
    • Remove stubborn stains and baked-on deposits with nylon scouring pads or oven spray-on materials.
    • Clean glass with proprietary glass spray-on materials. DO NOT apply cold water to hot glass to prevent cracking.
    • Oven shelves and support grids can be removed for cleaning, facilitating cavity wall cleaning.
    • Some internal areas around the fan baffle are not accessible to kitchen staff and should be cleaned periodically by service personnel to prevent performance issues.
  • Hotplate:
    • Use a smooth-bladed metal scraper to remove burned-on grease deposits.
    • The hotplate spillage tray is removed by sliding it out from the front.
    • Caution: The spillage tray becomes very hot during operation.
  • Preventative Maintenance Contract:
    • Regular servicing is recommended for maximum performance, ensuring correct operation, functionality, and safety.
    • Service should be in accordance with SFG20 Maintenance Schedules, or at a minimum, after 2,500 hours of use or annually, whichever comes first.
    • Arrange a maintenance contract with an appointed service contact for adjustments and repairs.
  • Warranty Information:
    • The unit carries an extensive mainland UK warranty, which is in addition to statutory rights.
    • The warranty policy, including conditions and exclusions, is available on the Falcon Foodservice website.
    • Service calls for in-warranty equipment are carried out according to conditions of sale, weekdays from 8:30 am to 5:00 pm.
    • When calling for warranty issues, provide the model number, serial number (both found on the data plate), and a brief description of the issue.

  • Disposal (WEEE Directive):
