Pineapple & Coconut spiced Quinoa
Serves 4
Prep time: 10 minutes
Cook time: 45 minutes
Function: Quinoa
Ingredients
• 4 cloves garlic chopped nely
• 1 stalk lemongrass (white only)
• 2 tsp ground cumin
• 1 long green chilli chopped nely (seeds optional)
• 300ml vegetable stock
• 200ml coconut cream
• 80 gm chopped tinned or fresh pineapple pieces
2 grain cups quinoa/ well rinsed
• Salt and pepper
Method
1. In cooker place cumin, garlic, chilli, stock, coconut cream, lemongrass and quinoa.
2. Cook on Quinoa Function in main menu.
3. When nished add pineapple.
4. For a delicious meal, serve with pork and green beans.
