This document describes the Siemens HB.78BB.6 Oven, a built-in appliance designed for preparing meals and drinks in private households. It is suitable for use up to an altitude of 4000 m above sea level.
Function Description:
The oven offers a variety of heating types and functions, controlled via a touch-sensitive control panel and two selectors. The function selector sets the type of heating or other functions, while the temperature selector adjusts the temperature or grill setting. The display shows active functions, time-setting options, and a heat-up indicator that fills with color as the appliance heats. A residual heat indicator shows the remaining heat after the appliance is switched off.
Heating Types and Functions:
- 3D hot air (30-275 °C): Bakes and roasts on one or more levels, distributing heat evenly with a fan from the ring-shaped heating element.
- Hot air gentle (125-275 °C): Cooks selected dishes gently on one level without preheating, using residual heat. This mode is used for energy consumption measurements.
- coolStart function (30-275 °C): Quickly prepares frozen products without preheating.
- Pizza setting (30-275 °C): Ideal for pizza or dishes requiring strong bottom heat, using both bottom and ring-shaped heating elements.
- Slow cooking (70-120 °C): Gently cooks seared, tender meat in uncovered cookware with even heat from above and below.
- Full-surface grill (Settings 1-3): Grills flat items like steak, sausages, or toast, and gratins food. The entire grill element area heats up.
- Hot air grilling (30-275 °C): Roasts poultry, whole fish, and larger meat pieces, with the grill element and fan switching on and off alternately to circulate hot air.
- Top/bottom heating (30-275 °C): Traditional baking and roasting on one level, ideal for cakes with moist toppings. Heat is emitted evenly from above and below. This mode is used for energy consumption measurements in conventional mode.
Other Functions:
- Programme (P): Uses programmed settings for various types of food, automatically selecting optimal heating type, temperature, and cooking time based on food weight.
- Self-cleaning: Cleans the cooking compartment virtually independently.
- Remote start: Allows starting and operating the appliance via the Home Connect app.
Time-setting Options:
- Timer (A): Runs independently of the appliance, up to 23 hours and 59 minutes, with an audible signal.
- Cooking time (H): Stops appliance operation automatically after a set time (up to 23 hours 59 minutes).
- End time (→): Sets the time at which operation ends, with the appliance starting automatically to finish cooking at the required time.
- Time (clock symbol): Sets the current time.
Rapid Heating (>>):
Shortens preheating time for temperatures over 100 °C, available for 3D hot air and Top/bottom heating. The appliance signals when rapid heating ends, indicating the optimal time to place food inside.
Childproof Lock (≡):
Secures the appliance to prevent accidental switching on or setting changes.
Sabbath Mode:
Allows setting a time of over 70 hours using Top/bottom heating (85-140 °C) to keep food warm without switching the appliance on or off. Once started, Sabbath mode cannot be changed or interrupted, and the end time cannot be delayed.
Home Connect:
The appliance is network-capable, allowing control via the Home Connect app on a mobile device. This includes setting functions, adjusting basic settings, and receiving software updates. Remote Diagnostics are also available through Home Connect.
Important Technical Specifications:
- Temperature settings: 1-degree increments up to 100 °C, then 5-degree increments.
- Grill setting 3 automatically lowers to setting 1 after approx. 20 minutes.
- Childproof lock activation/deactivation: Press and hold the ≡ button.
- Sabbath mode duration: Over 70 hours.
- Self-cleaning duration: Lightly soiled (approx. 1:15), Medium (approx. 1:30), High (approx. 2:00).
- Home Connect networked standby power consumption: Max. 2 W.
- Oven light bulb: Heat-resistant, 40-watt, 230 V halogen bulb.
- Installation dimensions: Refer to detailed diagrams for tall unit, below worktop, and corner installations.
- Electrical connection: Protection class I, requires protective earth connection. Fuse protection must match rating plate. Power cable must be plugged in until a click is heard.
Usage Features:
- Accessories: Includes a wire rack and universal pan. Accessories are inserted into hooks and tilt towards the door. They may deform when hot but regain shape upon cooling.
- Wire rack: For cake tins, ovenproof dishes, cookware, meat, frozen meals.
- Universal pan: For moist cakes, baked items, bread, large roasts, frozen meals, and catching dripping liquids.
- Shelf positions: Five positions, with position 1 at the bottom and 5 at the top.
- Oven light: Illuminates the cooking compartment during most operations and can be switched on independently.
- Cooling fan: Switches on/off based on appliance temperature, continues running after operation to cool down. Ventilation slot above the door must not be covered.
- Appliance door: Stops heating when opened, resumes when closed.
- Energy saving tips: Preheat only when necessary, use dark-colored baking tins, open the door as little as possible, bake multiple dishes consecutively or in parallel, switch off 10 minutes before cooking ends, remove unused accessories, defrost frozen food.
- Programmes: Pre-programmed settings for various foods (e.g., pizza, lasagne, chips, roasts, stews, fish) with recommended cookware, weight ranges, and shelf positions.
- Slow cooking: Technique for cooking food at low temperatures over a long period. Requires preheating the oven and cookware, searing meat, and keeping the door closed.
- Yoghurt making: Appliance can be used to make yoghurt in small containers placed on the cooking compartment floor.
Maintenance Features:
- Cleaning:
- General cleaning: Use hot soapy water and a soft cloth for smooth surfaces. For stubborn dirt, use alternative cleaning agents as specified.
- Appliance front: Stainless steel surfaces require special cleaning products; remove limescale, grease, starch, or albumin immediately. Plastic/painted surfaces: hot soapy water.
- Appliance door: Door panels, cover, handle, and base can be cleaned with hot soapy water or vinegar water. Door panels can be removed for thorough cleaning. Stainless steel inlay in the door cover can be cleaned with stainless steel cleaner.
- Cooking compartment: Enamel surfaces can be cleaned with hot soapy water, vinegar water, or oven cleaner. Self-cleaning function is recommended for heavy soiling.
- Glass cover for oven light: Hot soapy water.
- Accessories: Hot soapy water or oven cleaner. Enamelled accessories are dishwasher-safe.
- Self-cleaning function: Heats the cooking compartment to a very high temperature to burn off food residues. Requires removal of accessories and coarse dirt beforehand. Kitchen must be well ventilated during operation.
- Appliance door detachment: The door can be detached for thorough cleaning. This involves opening the door fully, lifting it slightly, and pulling it out. The door cover and inner glass panes can also be removed for cleaning.
- Replacing oven light bulb: Requires disconnecting the appliance from power supply, allowing it to cool, and using a new 40-watt, 230 V halogen bulb. The glass cover is removed by turning anti-clockwise.
