Mexican style Tomato Soup Serves 6
2onions,quartered
2clovesgarlic,peeled
1tablespoonoliveoil
2teaspoonscuminpowder
1teaspoonchillipowder
3x400gcanchoppedtomatoes
500mlwater
1teaspoonbrownsugar
1tablespoonvinegar
2x400gcansredkidneybeans,rinsed,
drained
Sourcreamandflourtortillastoserve
1.Usingtheprocessingbowlfittedwiththe
universal ‘s’ blade,processonionsand
garlicuntiljustchopped.
2.Heatoilinalargesaucepan,addonions
andgarlicandcookonamediumheat
untilonionsstarttosoften.Addthe
cuminandchillipowderandcook,stirring
untilthespicesbecomefragrant.Add
thetomatoesandwater;simmerfor20
minutesthenremovefromheat.
3.Stirthroughthesugar,vinegarandbeans
andallowtocool to room temperature.
4.Usingtheprocessingbowlfittedwiththe
universal 's' blade,processthesoupin
batchesuntilsmooth.
5.Returnsouptosaucepantoheatthrough,
servewithsourcreamandwarmflour
tortillas.

flakesandblackpepperfor5-10seconds.
2.Addthelambmeattothemixtureinthe
processingbowlandprocessfor30-40
secondsoruntilyouhaveafinemince.
3.Removetheuniversal 's' bladeandwithwet
handsrollthemincemixtureintosmall
balls.
4.Placemeatballsontoatraylinedwith
bakingpaperandcoverwithplasticwrap.
Allowmeatballstorestinthefridge,
preferablyovernightorforatleast30
minutesbeforeuse.
5.Panfrythemeatballsinbatchesandserve
withamintyogurtsauce.
