43. Place the fan interlock switch in the OFF position
if the restaurant is closing: otherwise return it to
the appropriate setting for cooking. See Figure 109

44. Wash, rinse and sanitize the rear grease guard and
grease cans at the 3-compartment sink. Reinstall
the grease cans. See Figure 110.

46. Bring the cleaning tools to the 3-compartment
sink. Rinse or launder the mop sock; then place it
in a clean sanitizer pail. Once the grill pad and
sock pad have cooled, remove then wash and rinse
thoroughly at the 3-compartment sink. Allow to air
dry.
47. Flip the grill pad over and replace on the tool for
the next grill cleaning.
48. Wash, rinse and sanitize all of the utensils and
tools used to clean the grill at the 3-compartment
sink. See Figure 112.

Note: Reverse the cooking side of the release
sheets on a daily basis (example: black side on odd
days; grey or brown side on even days).
49. Leave the upper platens in the OPEN position
overnight.
50. Place the fan interlock switch in the OFF position.

51. After the grill cleaning pad has cooled, remove it
from the pad holder. Wash and rinse it thoroughly
at the 3-compartment sink. Turn the grill pad over
and re-install it on the holder.
52. Wash, rinse, and sanitize all utensils and tools
