Control that the rotation direction of the bowl corresponds to the direction of the arrow placed on the bowl.
When in front of the machine, the right arm must move clock-wise and the left arm anti clock-wise; the bowl
must rotate clock-wise.
If the rotations are not correct, immediately stop the machine by pressing the emergency push button and
once stopped, release the electric plug from the electric feeding socket and invert the cables of the electric
plug by exchanging the brown coloured cable with the black one.
In case of connection by three-phase + earth, the black cables are two. In such case any of the two black
cables can be exchanged with the brown cable.
Never disconnect and never change the position of the yellow-green cable (earth).
Close the plug with its screw and replace it in the feeding socket. Then recontrol that the rotation direction of
the machine is correct, as described above.
c) To start the machine, the protection guard must be closed;
d) To stop the machine, press the Stop-Emergency push button;
e) In case of emergency stop the machine by pressing the emergency push button;
f) The machine will also stop by lifting the protection guard; this method must be only used in case of
estreme necessity.
The tampering/replacement, not authorized, of one or more parts or groups of the
machine, the use of accessories and or/tools and consumables different from those
recommended by the producer can place the operator or person encharged at risk of
injury, thus releasing the manufacturer from any civil or penal responsibility for
damages to persons and/or things that may occur.
After approximately 50 working hours from the installation of the machine, carry
out the maintenance work regarding the tensioning of the belts, as described in the
following paragraph.
5.2 RUNNING OF THE MACHINE
The use of the machine is very simple and this permits to express all its potentialities.
1) Load the bowl with the ingredients to be mixed in order that the total sum of the mass does not
exceed the nominal capacity of dough recalled in the “Technical Data of the machine” (paragraph
2.2). For this reason we recall that, the specific weight of flour being inferior to that of water, the
nominal capacity of the bowl has been determined on the base of the ratio water mass/flour mass =
0,55 and on the presupposition that the bowl be first loaded with flour and then water, so that the
flour getting wet increases its specific weight, thus decreasing the volume.
At the initial stage of mixing , when the flour is not yet mixed with the flour, thus in
the state of powder, we recommend to work with the mixing tools at the first speed
for at least five minutes, to avoid developing in the air of flour dust which, if inhaled,
can result, even if in the long run, harmful for the health.
2) The machine is loaded with the protection guard open, inserting the ingredients manually. The
protection guard (fig. 4 pos. 1), placed over the bowl and the arms, avoids risks and assures safety
for the operator. Mixing operations take place only with the protection guard closed. Possible adding
of other ingredients, during work, can be made through the suitable opening placed on the guard.
3) Select with the selector (fig. 3 pos. 1) the mixing speed desired (1 for the 1
st
speed, 2 for the 2
nd
speed). With the selector one can pass from the 1
st
speed to the 2
nd
speed.
4) To unload the dough, press the stop push button (fig. 3 pos. 3), lift the protection guard and
manually unload the dough from the bowl in subsequenet phases, after having divided the dough
roughly by hand by means of a plastic scraper( NEVER use metal scrapers).
5) By operating one of the safety devices – either stop emergency push button or protection guard – the
moving parts will stop in a short time.
