- MAINTENANCE
For a good and proper operating fo the machine, one must respect the maintenance operations recalled in this
manual.
All maintenance and cleaning works must be carried out with the machine off
and after having removed the electric plug from the electric socket.
The ordinary maintenance can be carried out by the operator provided that he strictly follows all the
instructions in this manual.
All the other operations are to be considered as “extraordinary maintenance” and must be carried out by
qualified personnel with specific qualifications, or, when required, by the manufacturer’s personnel.
6.1 DAILY OPERATIONS
a) Grease the central pinion, after every 2 wotking hours, by manually acting (turning slightly) the
greaser “Staufer” placed on the supporting shaft of the arms.
b) The machine must be kept in perfect hygienic conditions and cleaned after every working day.
The cautions to use for cleaning the machine are the following:
Remove all the residual dough or flour that may stop on any parts of the machine, in particular
in the creaks, in the interspaces or in the corners;
Eliminate all the residual products removed by means of an exhauster.
For cleaning do not use abrasive tools or metal scrapers.
In any case, do not use tools that could damage the surface.
For cleaning use plastic tools, brushes with soft bristles and cloths.
6.2 PERIODICAL OPERATIONS
a) Control the level of the oil in the gear bath; the lowest pinion must touch the oil in order to lubricate
the other gears. For further addition of oil use only TOTALERG oil “CERAN CA”.
