7.1 Cleaning and maintenance operations
7.1.1 Cleaning
Regular cleaning is mandatory in order to ensure problem-free operation of the coffee machine and to
ensure optimum coffee quality.
It is imperative to ensure that persons are not subject to any health hazards as a consequence of the
consumption of the food items dispensed by the e’line.
If care and cleaning of the coffee machine is not carried out properly, dispensing milk beverages will
constitute a food hygiene hazard point.
All automatic cleaning operations are logged.
