Your Groen GSSP-BL Boilerless Steamer is designed to give years of service. It
has a mirrored stainless steel cavity (steaming chamber) and an atmospheric
steam generating reservoir. A powerful side-mounted convection fan circulates
the steam in the cavity to increase heating efciency, steaming speed, and
uniformity.
Each cavity holds up to three, ve or ten steam table pans (12 x 20 x 21/2 deep).
An 18-gauge stainless steel case encloses the cavity, the steam generating
reservoir and the control compartment that houses electrical components. Door
hinges are eld-reversible (the door may be set to open from the left or right).

Overview

The Groen SmartSteam® Pro Boilerless Steamer is a commercial kitchen appliance designed for efficient and uniform steaming of food. It is available in various configurations, including counter-top and single or double-stacked units with stands, accommodating different capacities of steam table pans.

Function Description

The steamer operates as a boilerless unit, meaning it generates steam without a traditional boiler. Instead, it features a mirrored stainless steel cavity, which serves as the steaming chamber, and an atmospheric steam generating reservoir. A powerful side-mounted convection fan circulates steam within the cavity, enhancing heating efficiency, steaming speed, and uniformity. Each cavity is designed to hold either three, five, or ten steam table pans (12 x 20 x 2½ inches deep). The unit's construction includes an 18-gauge stainless steel case that encloses the cavity, the steam generating reservoir, and the control compartment housing electrical components. The door hinges are field-reversible, allowing the door to be set to open from either the left or right side, providing flexibility in kitchen layout.

The GSSP-BL steamers are equipped with electronic controls, managed through a touch screen display and an LED-lighted on/off push button. This modern interface simplifies operation and allows for precise control over steaming processes. All models incorporate a drain system that includes a condensate spray, which cools the drain water before it exits the unit.

Usage Features

The steamer offers three primary operating modes: TIMED, MANUAL, and HOLD, catering to various cooking needs.

  • Initial Start-Up: After installation, the unit undergoes a self-diagnostic process. The user must ensure the water supply line is open and electrical service is connected. The door must be closed for the unit to heat. The on/off switch, located at the rear, must be in the ON position. Pressing the power button on the front control panel initiates the self-diagnostics and subsequent pre-heating. During initial start-up, the installer is required to record the start-up date in the controls via the MENU → SERVICE → STARTUP DATE menu.

  • Manual Mode: In MANUAL mode, the steamer operates in an infinite steam mode without a timer, ideal for continuous steaming. Steaming can be canceled by pressing the exit button, requiring user confirmation before returning to the home screen and dropping to the ready temperature.

  • Timed Mode: This mode allows users to set specific steam times using a keypad, with a maximum duration of 12 hours. Once the timer counts down, additional time can be added using the "+1m" button. Steaming can be canceled, and the unit will return to the home screen. When the timed countdown reaches zero, the screen background changes to orange, an alarm sounds, and the unit enters HOLD mode, with the time counting up. The "+1m" button remains active for 10 minutes in HOLD mode for additional steaming needs. The timer pauses if the door is opened, provided the "COMPENSATING TIMER" setting is turned ON.

  • Hold Mode: HOLD mode maintains a cavity temperature between 145°F and 165°F. This mode can be accessed directly from the home screen or automatically after a TIMED mode expires. Holding can be canceled with user confirmation, returning the unit to the home screen.

  • Pan Timers: Available in all modes, pan timers allow users to set individual timers for specific pans. These timers are independent of the main steaming mode and help manage the cooking time for individual food items. Users can set desired times, name timers from a predetermined list, and activate them. When a pan timer has 30 seconds remaining, it displays on the screen. Upon expiration, the timer changes color, blinks, and an alarm sounds until silenced. Pop-up notifications appear on the home screen if a timer goes off while not in a steaming mode.

  • Loading Food: Food should be loaded into pans in uniform layers, avoiding mounding. If steaming only one pan, it should be placed in the middle position. For foods that foam, such as shellfish, an empty solid 2½-inch deep pan should be placed in the bottom slot of the pan racks to catch drippings and prevent foaming.

  • Removing Food: When removing pans, the door should be opened, and steam allowed to escape before accessing the product. Hot pads or oven mitts are recommended to protect hands from hot pans.

  • Shut-Down: To shut down the unit, the power button on the front control panel is pressed. The steam generating reservoir then fills with cold water and drains, and a shutdown progress bar is displayed. The unit cannot be restarted until the shutdown process is complete.

Maintenance Features

The Boilerless Steamer is designed for minimal maintenance, with most adjustments handled automatically. Regular cleaning and deliming are crucial for optimal performance and longevity.

  • Daily Cleaning:

    1. Exterior Cleaning: A warm solution of mild detergent should be used with a moist cloth to clean the exterior, avoiding contact with controls, electrical parts, or rear panel louvers. Stubborn material can be removed with a fiber brush or plastic/rubber scraper. Stainless steel surfaces can be polished with a recognized stainless steel cleaner, always scrubbing with the grain.
    2. Interior Cleaning: After allowing the steamer to cool, the steam lid, left pan rack, and right fan shroud/rack assembly should be removed. These parts can be cleaned in a dishwasher. The entire steamer cavity should be wiped down with mild detergent to remove food and scale particles. Probes should be cleaned if residue or loose scale is present.
    3. Drain Cleaning: The cup and overflow drains need to be cleaned using a cleaning brush. The brush should be inserted at least ten inches into the drains and pushed/pulled several times until the drains are clear and water flows freely. If clogging persists, professional service is required.
    4. After cleaning, the steam lid and fan cover assembly should be re-installed. The door should be left open to prolong gasket life and allow the cavity to air out.
  • Deliming: The steamer's control system monitors water level probes for cleanliness and triggers an advanced cleaning warning when probe cleaning is required. The unit will continue to operate for a limited period (8 hours) after the warning appears, indicated by a countdown clock. If the clock expires, the unit automatically shuts down.

    • The DELIME button, if turned ON in settings, changes color to indicate the deliming schedule status: yellow at 75% and 90% completion, and red upon expiration.
    • The deliming process takes 60-90 minutes and involves adding a specified amount of approved deliming solution to the water reservoir after removing internal components. The unit then runs a cleaning cycle. After completion, the interior must be wiped clean, and all components re-installed.
  • Door Gasket and Latch Pin Adjustment: If steam or condensate leaks from around the door, the gasket should be checked for cracks or splits and replaced if necessary. The steaming chamber drain should also be inspected for blockages. The door latch pin can be adjusted by loosening the lock nut, turning the pin 1/4 turn clockwise, and retightening the lock nut. This adjustment can be repeated until the door fits tightly to prevent leakage. The hinge may also be adjusted.

  • Replacement Parts: For replacement parts, users should contact an Authorized Service Agent, providing the model designation, serial number, part description, part number, quantity, and voltage/phase.

Safety Precautions:

The manual emphasizes several safety warnings, including:

  • Installation: Must be performed by qualified personnel (electricians and plumbers) in accordance with applicable codes.
  • Steam Hazards: Always stay away from steam when opening the door to prevent burns.
  • Cleaning: Disconnect power before cleaning. Keep water and cleaning solutions away from controls and electrical components. Do not hose or steam clean any part of the unit. Allow the steaming chamber to cool completely before cleaning. Use mild cleaning agents, safety glasses, and rubber gloves. Do not put hands or tools into the steaming chamber until the fan stops turning.
  • Chemical Use: Avoid cleaning agents containing sulfamic acid, chlorides (including hydrochloric acid), or more than 30% phosphoric acid. Do not use degreasers containing potassium hydroxide or sodium hydroxide, or alkaline substances.
  • Material Use: Do not use metal sponges or implements that could scratch stainless steel surfaces, as scratches can promote bacterial growth and corrosion.
  • High Voltage: High voltage exists inside control compartments; disconnect from the branch circuit before servicing to prevent injury or death.
  • Drainage: Do not connect the drain directly to a building drain, and ensure no water traps are in the drain line to prevent pressure buildup and gasket leaks. The drain must be rated for boiling water.
