8.1 Cleaning and maintenance schedule
Basic Safety Instructions
The purpose of these instructions is to ensure that everyone working with and on the combi oven will
be fully aware of all the risks, hazards, and safety requirements involved and will observe the warnings
in the operating manual and on the combi oven. Failure to follow these instructions may result in
death, injury, or property damage.
Hot steam
Risk of scalding posed by hot steam
If you spray water into oven cavity while the latter is hot (e. g., with a spray head), the steam pro-
duced inside the oven cavity may result in scalding.
Do not start cleaning until the oven cavity has cooled down to a temperature of less than 60 °C.
Contact with cleaning agents
Skin and eye irritation hazard and chemical burn hazard
ConvoClean new/Cleaner and ConvoCare/Neutralizer cleaning agents will irritate the skin and eyes
upon direct contact. ConvoClean forte/Cleaner will cause chemical burns upon direct contact.
Do not inhale the spray mist.
Do not let your eyes or skin come into contact with the cleaning agents.
Do not, under any circumstance, open the unit door during a fully automatic cleaning cycle.
Wear protective gloves and safety eyewear as indicated in the material safety data sheet.
Prerequisites
Before performing any cleaning or maintenance work, check to make sure that the following prerequi-
sites are met:
You must have already read and understood how to perform the work described in 'How to Do it
Right' in the combi oven’s operating manual.
The units must be de-energized before any of their outer or inner components are cleaned.
The units must have already cooled down.
Weekly cleaning
Use a damp cloth to wipe the units on the outside.
Hot components
Burn hazard posed by hot components
There is a risk of touching hot components when the steam guard is open.
Let the units cool down before performing any maintenance.
Wear the required personal protective equipment as indicated in the relevant safety instructions.
