11. Remove and empty the grease cans, then rinse and
replace. See Figure 147.

12. Remove all of the clips, bars and release sheets
before Recovery cleaning. See Figure 148.

13. Clean the release sheets (see O&T manual or Grill
Cleaning Kay Card for details. See Figure 149.

14. Take the clips and bars to the 3-compartment sink;
then wash, rinse and sanitize.
15. Gather the materials for cleaning while the grill is
cooling down.
16. When the grill has reached 285_F, it is ready for
cleaning.
17. Put Personal Protective Equipment on (gloves,
face shield, apron). See Figure 150.

18. Wipe the upper and lower plates with a clean
sanitizer-soaked grill cloth before cleaning.
Discard the cloth into the soiled towel pail after
use. See Figure 151.

19. Scrape as much carbon buildup off as possible of
all surfaces of the upper platens (especially the
back and corners) with scraper.
20. With all of the platens up, apply sufficient KAYr
QSR Heat Activated Grill & Toaster Cleaner to
the grill tool pad and coat the edges of the upper
platens with the product. See Figure 152.
