CAKE
The following recipe should be baked on setting 10, “Cake.”
Breadmaker Coffee Cake
For Cake INGREDIENTS
1 cup milk
1 egg yolk
1 tbsp. butter
2 ¼ cup bread flour
¼ cup sugar
1 tsp. salt
2 tsp. active dry yeast
For Topping INGREDIENTS
½ cup sugar
2 tbsp. butter, melted
1 tsp. cinnamon
½ cup chopped pecans or walnuts
For Glaze (Optional) INGREDIENTS
2 tbsp. milk
1 tsp. softened butter
1 cup powdered sugar
½ tsp. vanilla
When done, test cake by inserting a toothpick into the cake. If baking is not
complete, cook for an additional 10 minutes on the "Bake" setting of your
breadmaker. If baking is complete, remove bread pan from breadmaker and let cool
for 10 minutes and prepare the topping and optional glaze.
Prepare topping by mixing all dry ingredients into the melted butter. If glaze is
desired, whisk all glaze ingredients together until well combined and not lumpy.
When cake is cool, remove from bread pan. Cut cake in half vertically to create two
equal halves with a flat surface. Top cake with topping and glaze, serve warm.
JAM
The following recipe should be baked on setting 11, “Jam.”
Breadmaker Strawberry Jam
INGREDIENTS
2 cups Granulated Sugar
2 tbsp. Powdered Low Sugar Fruit Pectin
3 cups Fresh Strawberries, washed, hulled, and sliced
Yields 3 cups finished jam.
