How to Clean the Oven
Precautions
Background The oven has five different cleaning modes. The four cleaning cycles identified
with blue icons require Alto-Shaam cleaner CE-47853. The catalyst wash cycle is
identified with a green icon and requires catalyst wash descaler CE-47859.
▪ The rinse cycle is a mid-day rinse to reduce the
grease.
▪ The light clean cycle is for light debris.
▪ The medium clean is for heavy debris (10 full
loads of chicken) in one chamber.
▪ The heavy clean is for heavy debris (10 full
loads of chicken) in all chambers.
▪ The catalyst wash reminder screen displays
after 18 hours of cumulative cleaning (example: after five heavy cleaning cycles).
Cleaning the oven To clean the oven, do the following.
1. Touch the menu icon /. The menu screen displays.

WARNING: Burn hazard.
Wear protective gloves, protective clothing, eye protection, and
face protection when handling oven cleaner. Do not open the
oven door during the cleaning cycle.
NOTICE
Using improper cleaning procedures will damage the catalyst
and void the warranty.
Use only Alto-Shaam cleaner CE-47853 when running a
cleaning cycle. For a catalyst cleaning cycle, use only catalyst
wash descaler CE-47859. The use of any other cleaning
chemical may damage the catalyst and void the warranty.
Do not use steel pads, wire brushes, or scrapers when
cleaning.
