Dark Rye (Pumpernickel) Bread
Pumpernickel makes the best deli, cheese or vegetable sandwich. If you want an even darker colored
bread, increase the amount of cocoa or add a teaspoon of instant espresso.
Makes a 1.1/2lb. loaf
1-1/4cup warmwater
1Tbl. vegetableoil
1-1/2Tbl. molasses
1cup ryeflour
1-1/2cup breadflour
1/2 cupwholewheat flour
1/4 cup gluten
3Tbl. dry milkpowder
1Tbl. carawayseeds
1Tbl. cocoa
I tsp. salt
1-1/2tsp. dry yeast
Add all ingredients to bread pan in the order given.
