CARROT PECAN BREAD CARROT PECAN BREAD (cont'd.)
Carrots have been cultivated for over 2000 years.
Elizabethan women adorned their hair with the wispy,
fernlike leaves of carrots. Today this culinary staple is
honored in a delicious quick bread.
Premeasure ingredient groups (sift together
ingredient Group D). Place in bowls near Bread Machine.
All ingredients must be at room temperature.

3 tablespoons butter/margarine
1/4cup granulated sugar
1/4 cup dark brown sugar, packed

large eggs
cup finely grated carrots
cup chopped pecans
cups unbleached all-purpose flour
teaspoon baking powder
teaspoon baking soda
teaspoon ground cinnamon
teaspoon ground nutmeg
teaspoon salt
cup milk
[] Place ingredient Group A in pan. Press
SELECT for Quick Bread. Press BAKING CONTROL
for Light. Press START. Mix for 1 minute and 15
seconds, scraping down sides of pan with spatula if
necessary.
[] Add ingredient Group B. Mix for 1 minute and
10 seconds, scraping down sides of pan if necessary.
[] Add ingredient Group C. Gradually add ingredient
Group D and then E. Scrape down sides of pan if
necessary.
[] Lower lid. Loaf will be ready in 11/2hours.
