5.Tooperate:OncetheConvectionGrillhasstarted,operateasfollows;
UPre‐Heat:UThisisthebeginningstageofcookingorsmokinginwhichthefuelisignited,andthegrillis
broughttothesettemperatureasquicklyaspossible.Youmaynoticeinthisstagethat,initially,the
augerwillfeedfuelalmostconstantly.Thisistoprimetheburnpot
sothatitisabletomaintain
significantheat.WhenthisisconcludedtheITCwillthentakecontroloverthefuel,feedingthefir e
preciselyoverthedrastictemperaturechangefromambienttoyourcookingorsmokingsetpoint.The
durationofthisstagewillvarysomewhatduetodiffering
ambientconditions,settemperatures,and
grillmodels.Inmostcases,thegrillwillbeinthepre‐heatstageforsomewherebetween15and25
minutes.

Tovarysmokeflavorintensity,experimentwiththe
amountoftimeyouusethesmokemodeandthemix
offlavoredpelletsyouusealongwiththeallpurpose
pellets.Thisismoreimportantifyouusestronger
flavoredpelletssuchasMesquite.Switchingtosmoke
modesoonafter
puttingyourfoodonthegrillallows
thesmoketopenetratethemeatsbeforethey have
achancetosearclosed.Thesmokemodeworksbest
whenalongercookingtimeisrequired,suchaslarge
cutsofmeat,fish,orpoultry.Experimentwiththe
lengthoftimeyouleave
forsmokingbeforecooking
thoroughly.Trydifferentcombinationsofbothmodes.
