considerthefollowingfactorswhendeciding whichmethodbestfitsyourneeds.
Smokinginthe225°to275°Ftemperaturerangeisthegenerallyacceptedmethodformostmeats.....The
possibleexceptionwouldbesomefish......Notonlydoyougetgreatresultsatthesetemperatures,butit
takesashorteramountoftime.
Ifyouwishtosmokeatlowertemperatures theMemphisProiscalibratedtoallowyoutogoaslowas180°.
Whensmokingatthelowertemperaturesit’scriticalthatyouuseapremiumfoodgradepelletsuchas
NaturesWayflavoredBBQPellets.Nature’sWaypremiumpelletsarespecially
formulatedfromextra
cleanrawmaterialsandarespecificallysizedtoallowmoreevenfeedingatlowfeedrates.Forbestresults,
alwaysusepremiumpellets.
Itisstronglyrecommendedthattheburnpotbecleanedbeforeandafter smokingforasignifican tperiod.
Uncheckedashbuild‐upcouldeventuallyprohibi t thegrillfrommaintainingsmokingtemperatures.
Caution:Wedon’trecommendthatyouusethelowertemperatureswhensmokingincoolandorwindy
conditions.Attemperatureslessthan225°thepossibilityofcreosote*developingfromsmoke
