Alwaysuseameatthermometertobesuremeatsandpoultryarecookedtoasafeinternaltemperatureanddoneness.Serious
Healthrisksmayexistwithundercookedmeat!.Approximatecookingtimesare,fromvarioussourcesandarebasedonmeatat
refrigeratortemperatures.
Useagoodqualitytemperatureprobetoassurebestresults.Wesuggestthatwhengrillingathigher
temperatures,youapplybarbecuesauceonlyduringthelast15to30minutesofgrillingtopreventexcessbrowningorburning.
NOTE:KeephoodclosedwhenusingSmokeMode.
Smokingtimesarelargelydependentonpersonalpreferenceandthequalityofthemeatbeingsmoked.Ingeneralthelonger
yousmokethemeatatalowertemperaturethemoretenderthemeatwillbecome.Youwillalsoneedtoconsiderhowmuch
ofasmoketasteyouwantandwhatflavorofsmoke.Oak,Hickory,Apple,Alder,Cherry,Mesquitetonamethemostcommon.

ForbestresultswerecommendthatyouuseasetpointtemperatureinSmokeModefrom225275°formostmeats.Ifyouwish
tohaveasmokierflavorandhavethetime,youcangoaslowas180°,butyouusuallydon’tgainmuchbydoingthat.Alwaysuse
ameatthermometertobesuremeatsandpoultryarecookedtoasafeinternaltemperatureanddoneness.
Itshouldalsobenotedthat,whensmokinginaverywarmenvironment(sunnyweatherinexcessof90°F),itmaybedifficultfor
yourgrilltomaintaintemperatureslowerthan200°F.
Ifnecessary,thiscanberemediedbyleavingthehoodslightlyajar.
