InitialBurnOff
Before cooking for the first time, we recommend thatyou“burn off” the grill to rid it of any
foreign matter used in the manufacturing process. Prior to burnoff, completely remove the
plastic film on all stainless steel surfaces.Failure to do so will cause the
film to melt to the
metal,anditwillbeextremelydifficulttoremove.Removethecookinggratesandwashwitha
mild soapordetergent.Withthegratesremoved,lightandoperate the grill at 450F (in cook
mode) with the hood down for 20 minutes. After burnoff, turn
the grill OFF and replace the
grates.
LightingyourGrill
ItisrecommendedpracticetogothroughthePeriodicGrillMaintenance(pg.10)procedures
frequently.Thiswillensureproperignitionofthepelletsandispartofthenormalmaintenance
procedure.Lightperinstructionsfoundindetailinthismanual.
Ifthegrillfailstolight,itis
mostlikelyduetoadirtyorpluggedburnpotand/oraburnpotobstructionblockingtheauto
igniterairpassages.(refertoUsingYourMemphisWoodFiredConvectionGrillonpage5for
cleaninginstructions.)Shouldyourautoigniterrefusetoignite
thewoodpellets,itiseasyto
lightyourgrillmanuallywithamatchandlightingagent.(RefertoManualStartUponpage8
forinstructions.)
HoodPosition
Alwayscookwiththehoodclosed.Cookingwiththehoodclosedkeepsthetemperatureeven,
cooking the food faster while using
less fuel. A closed hood also helps to create a smokier
flavor.Ifthehoodisleftopen foran extendedperiodoftime,itwillcausetheITCtoincreas e
the fuel feed rate in an effort to increase the grill temperature.This could result in an
overloadedburnpot.

Insteadoffrequent,visual checksof yourfood, theuseofanelectronicmeatthermometeris
recommended.Thewiredversionofthistoolcanberoutedthroughthe5/16” holeintheside
of the Memphis Select or Advantage, or under the hood gasket on the Pro or BuiltIn
to
preventdamagetothewires.
