Overview

The Serv-Ware Fryer Gas Cabinets (models 40, 50, and 70) are commercial-grade gas fryers designed for cafeteria, restaurant, and general kitchen use. These units are built for durability, performance, and efficiency in food preparation, specifically for frying with oil or vegetable fat.

Function Description:

The primary function of the Serv-Ware Fryer Gas Cabinets is to provide a reliable and efficient means of deep-frying food. The design focuses on achieving a uniform cooking process by utilizing a tank that acts as an intermediary between the heat source (fire) and the food. This calorific capacity ensures optimal flavor in the fried food. The fryers are equipped with a gas distribution and flare assembly, thoroughly tested to ensure safety and efficiency of the cast iron burners. A thermopile system is integrated for safety, ensuring the pilot flame remains active and detecting flame presence to prevent gas flow to a burner if no flame is detected. The pilot flame is designed to stay lit throughout the workday after initial ignition, minimizing gas consumption.

  • SS-SGF-50L/N: 50 lb (20 l) capacity

Usage Features:

  • Installation: Requires installation in accordance with local codes (National Fuel Gas Code ANSI Z223.1 in the US, CAN/CGA-B149.1 or B149.2 in Canada). Installation must be performed by qualified and authorized persons. A gas pressure regulator (supplied with the equipment) must be installed.
  • Clearances: Requires 10" (254 mm) rear and 6" (152.4 mm) side clearance from combustible surfaces. No clearance is required from non-combustible surfaces.
  • Foot Leveling: Equipped with four adjustable legs for stable and level placement on the work surface.
  • First Time Use: Before operation, all protective PVC film, plastics, and straps must be removed. A preliminary cleaning with neutral soap and water is recommended. The tank should be filled with vegetable oil or shortening to the indicated level before ignition.
  • Ignition: Involves opening the manual gas supply valve, turning the gas valve knob to "pilot mode" and squeezing for 30 seconds to release gas, lighting the pilot with a wick, and then turning the knob to "ON" and setting the desired temperature.
  • Drainage: Features a 1 1/4" Full port drain valve for fast draining, facilitated by an accessory tube for oil removal.
  • Construction: Stainless steel tank for durability and high production output, stainless steel front, door, and sides for the cabinet. Heavy-duty cast iron burners and heavy gauge metal tubes. Heavy gauge deflector system for quicker recovery time.
  • Mobility: 6" (152 mm) swivel castors can be purchased separately. If equipped with casters, appliances must be installed with quick disconnect connectors complying with ANSI Z21.69.CSA 6.16 and ANSI Z21.41.CSA 6.9.

Maintenance Features:

  • Cleaning:
    • Inside: Recommended daily cleaning. After oil cools, drain using the accessory tube. Rinse with hot water to remove debris, then fill with water and neutral detergent, boil for 15 minutes, and scrub with a plastic bristle brush. Drain, rinse with clean water, use vinegar (250ml to 20 liters of water) to neutralize detergent, and rinse again with clean water. Always ensure oil is at room temperature before cleaning to prevent burns.
    • Outside: Allow equipment to cool. Clean daily dirt with a mild detergent or soap solution applied with a damp cloth, then wash and dry thoroughly. Avoid sharp or abrasive materials, strong/abrasive cleaners, and direct water jets to prevent damage and corrosion.
  • Preventive Maintenance: To ensure maximum efficiency and reduce downtime, annual or semi-annual service by a qualified technician is recommended. This includes:
    • Examining air inlets (rear and bottom) and air vents (hood) at least twice a year.
    • Cleaning and adjusting burners, regulators, etc., twice a year.
    • Checking and calibrating the gas supply system pressure at least once a year.
  • Oil Replacement: Oil should be replaced when it shows foam, smoke, sharp color, or odors.
  • Parts & Service: Parts and service manuals are available online at www.servware.com. For repairs, contact an authorized service technician and request original replacement parts. Unauthorized alterations or tampering are dangerous and void all warranties.
  • Gas Leak Check: Before operation, all gas supply line gaskets must be checked for leaks using a sudsy soap and water solution. Active bubbling indicates a leak, requiring immediate shutdown of the manual gas valve and calling a certified technician.
