4 MAINTENANCE
Routine maintenance work covers all operations to keep the various parts of the refrigerated cabinet clean and
operational and must be carried out regularly or when deemed necessary, whenever a decrease in the refrigerating
performance of the appliance is noted.
As these operations deal with normal cleaning, they are usually carried out by the user (himself/herself).

WARNING DANGER
For safety reasons we would like to remind you that all cleaning and maintenance operations must be
carried out with the appliance switched off and disconnected from the mains. Turn the switch connect-
ing to the mains to the ”OFF position. With appliances equipped with a plug, remove the plug from
the socket.
Do not remove the safety warnings or the machine's labels; in case of repairs, if even one of them is
found to be missing, the machine is considered out of warranty.
Do not try to change the parameters yourself. This operations must be performed only by the manu-
facturer or by qualified personnel.
Do not try to replace the electronic and/or mechanical parts yourself.
Only qualified personnel can make replacements, changes and perform extraordinary maintenance
operations.
NEVER clean the mechanical parts while they are moving.
NEVER clean the electrical parts when the machine is powered. For any type of cleaning and/or main-
tenance operation, we recommend using latex gloves.
4.1 Preparing for maintenance operations
For the appliance to work correctly, bearing in mind that it is designed to preserve food, whether wrapped or not,
it is essential to keep all its parts (inside walls, shelves, base and runners) clean at all times. We generally advise the
following for cleaning operations:
disconnect the appliance from the electrical power supply;
do not use
direct and high pressure water jets to wash the inside and outside of the machine;
do not use
solvents, abrasive detergents, products with acid pH (vinegar) or chlorine-based substances (bleach,
muriatic acid, etc.) or otherwise toxic for cleaning or in the vicinity of the appliance;
use only
warm water and neutral soap, or products expressly permitted by the hygiene regulations in force in the
country of installation for cleaning catering equipment; rinse with clean water and dry with a soft cloth.
Recommended cleaning operations and maintenance
Before use
Remove the protective film inside and outside the appliance; clean the appliance and all its accessories using
warm water and neutral soap, or products expressly permitted by the hygiene regulations in force in the country
of installation for cleaning catering equipment; rinse with clean water and dry with a soft cloth.
Daily
Carefully clean the outside of the appliance.
Carefully clean the inside of the door around the gasket (see the item "Cleaning the gasket").
